Yes, Soy or Rice milk or any other cow milk substitute i.e. goat, et cetera. I would not suggest water though but you can do that too. My mother always used these liquids since I am allergic to milk. I am not only lactose intolerant but also cow milk intolerant.

Yes there are various things to substitute with. Water,Yogurt,Applesauce or Vegetable Oil and here are a couple recipes that might help =)



Eggless,Butterless,Milkless Cake

INGREDIENTS
3 cups all-purpose flour
2 cups white sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking soda
2 teaspoons baking powder
2/3 cup vegetable oil
2 cups water
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract

DIRECTIONS
In a large bowl, combine all the dry ingredients together.
Combine all the wet ingredients together in another bowl.
Pour the liquid ingredients all at once into the dry ingredients, and beat until smooth.

Pour batter into a greased 9 x 13 inch pan.

Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Let cool in pan. When cool sprinkle with confectioners' sugar.

BlueBerry Cake

2 cups sugar
1 3/4 cups margarine
3 eggs
1 cup milk (milk allergy use 1 cup water)
2 teaspoons almond flavoring
3 1/2 cups flour
1 1/2 teaspoons baking soda
1 pinch salt
2 cups blueberries

Mix and cream together: sugar,margarine,eggs ,almond in bowl.

Then mix together in another bowl: flour, baking soda, salt and adding milk (or substitute- water) while combining both mixtures.
Add blueberries.
Bake 350 degrees for approximately 1 1/4 hours.
Great in large tube-like or bundt cake pan.

Plain yogurt,yes, but you would need to add a little water, also.

8 ounces milk = 2 ounces yogurt + 6 ounces water.

The same formula for milk based pudding or sour cream.

Or you could use regular cream as well.

8 ounces milk = 7 ounces cream + 1 ounces water.

In case you don't know it, 1 cup = 8 ounces.

Sorry, typed it wrong the first time and corrected it.

Additional: Do not use an extra egg or butter (margarine, oil) as some suggest. Eggs will leaven the cake and butter will shorten the batter.

One cup milk:

1 cup soy milk
1 cup spring water or juice
1/4 cup nuts or seeds blended with
1 cup water
1/3 cup shredded coconut blended with 1 cup water and 1 tsp vanilla
1 cup any other milk substitute available in your grocery or health food store

I combine sour cream & water to replace milk. The sour cream makes the cake moister and adds a nice flavor (think sour cream cookies or donuts). I mix about 1/3rd sour cream & 2/3rds water.

milk is the best thing to use but if u dont have any then just use butter not a full cup tho
