Fresh Rhubarb Pie
INGREDIENTS
4 cups chopped rhubarb (Look for thick, juicy red stalks )
1 1/3 cups white sugar
6 tablespoons all-purpose flour
1 teaspoon butter
1 recipe pastry for a 9 inch double crust pie
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture. Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top crust.
Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 40 to 45 minutes. Serve warm or cold.
**Put a little aluminum Foil over the edges for first 15 minutes so it doesn't burn.

ORANGE JULIUS PIE
Crust:
3 tablespoons butter
2 tablespoons orange marmalade
1 1/4 cup graham cracker crumbs
1/2 teaspoon cinnamon
Filling:
3 cups orange sherbet
3 cups frozen vanilla yogurt
1 cup Cool Whip
Preheat oven to 350°F.
Allow sherbet and frozen yogurt to sit at room temperature until slightly softened.
In a microwavable bowl, melt butter with orange marmalade. Stir in cinnamon and graham cracker crumbs. Mix well.
Spray a 9" pie pan with non-stick spray. Press crumbs evenly into psn along bottom and up sides. Bake at 350°F for 8-10 minutes, remove from oven and allow to cool.
Fold together softened sherbet, yogurt and Cool Whip. Spoon mixture into baked and cooled pie crust.
Note: To save time, a store bought graham cracker crust may be used. Freeze 2 hours or until firm. Remove pie 10-15 minutes before serving.
Serve topped with whipped cream or Cool Whip and shaved orange peel curls if desired. For a tropical flair, sprinkle with flaked coconut.

Creamy Blueberry Pie
INGREDIENTS
3 cups fresh blueberries
1 (9 inch) deep dish pie crust
1 cup white sugar
1/3 cup all-purpose flour
1/8 teaspoon salt
2 eggs, beaten
1/2 cup sour cream
1/2 cup white sugar
1/2 cup all-purpose flour
1/4 cup butter
DIRECTIONS
Combine 1 cup sugar, 1/3 cup flour, and salt. Add eggs and sour cream, stirring until blended.
Place blueberries in pastry shell, and spoon sour cream mixture over berries.
In another bowl, combine 1/2 cup sugar and 1/2 cup flour. Cut in butter or margarine with pastry blender until mixture resembles course meal. Sprinkle this mixture over sour cream mixture and berries in the pie shell.
Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes, or until lightly browned. If desired, garnish with additional blueberries and mint leaves.

1 (3 ounce) package peach gelatin
3 cups peeled, sliced ripe peaches
1 (9 inch) pastry shell, baked
Whipped cream
DIRECTIONS
In a saucepan, combine sugar, cornstarch and water until smooth. Cook and stir over medium heat until bubbly and thickened. Remove from the heat; stir in gelatin until dissolved. Cool. Arrange peaches in crust; pour filling over peaches. Chill until set, about 2 hours. Serve with whipped cream if desired.

This one you don't bake, but its low calorie and diabetics can eat it, its refreshing and most everyone loves it.
1 Low-fat graham cracker crust
In large bowl mix and add in order: ! med sized can pineapple bits in its own juice
8oz no fat sourcream
1 large box sugar-free vanilla instant pudding
1-8oz carton non-fat or sugar free cool-whip-pour into pie shell-chill
about 4-6 hours.yummmmm
