You can make a great breakfast stromboli. Much like a dinner stromboli, you get to select what's inside.
Get a container of pizza dough, from the refrigerator case at the grocery store. Stretch out the dough then in the center put a layer of cheese (or multiple cheeses), add some green peppers or diced onions, beat up 2 or 3 eggs and pour that over top, add some more cheese. Fold the dough into a stromboli shape - be sure to pinch the top & ends together so nothing seeps out. Bake it in the oven for 20 minutes (or until golden brown. Take it out. Let it cool. Slice into servings.
This works great for non-veggies too. You can add precooked bacon, sausage, etc. and have a great breakfast treat.
Belgium waffles with whipped cream (the kind in a can) and sliced strawberries (slice the night before, sprinkle with a little granualted sugar and store covered in the fridge) is another great option.

I know you said no fry up but.............How bout a veggie omelet?? I assume you are cooking for all three of you........
Dice up real fine green/yellow/red pepper, red onion, some zucchini squash, and whatever else you choose.
Crack 8 eggs into a bowl, pour in a little bit of milk...maybe 1/4 cup, salt, pepper, mrs dash. Stir together. Meanwhile heat up the fry pan with a dab of butter(margarine) in the bottom...guess about a tsp or 2, when cracklin....pour eggs into the pan. Let cook for a few minutes and then lift every so often to let more egg run underneath until almost done. Add the veggies to the eggstuff along with a little cheese if desired. Fold in half and continue to let finish cooking. Sprinkle cheese over the top before serving.
Add fresh fruit on the side with yogurt dip, or bagels/cream cheese, or cottage cheese with sliced tomato.
For a drink, make a sherbert punch with 1 bottle ginger ale, 1 can pineapple juice, and lemon/lime sherbert.

Pear stuffed French Toast:
2 teaspoons canola oil
1 teaspoon butter
1 1/2 cups (1/4-inch diced) firm pears
1 teaspoon ground cinnamon, divided
2 tablespoons light cream cheese
4 (1 1/2-inch thick) slices whole grain bread
2 egg whites
1 whole egg
Butter-flavored non-stick cooking spray
Heat the canola oil and butter in a 10-inch nonstick skillet. Once the foam from the butter has subsided, add the pears and 1/2 teaspoon cinnamon. Cook the pears until just warmed through, about 1 1/2 minutes. Remove from heat and add the cream cheese; stir until cream cheese is melted. Remove from skillet to stop the cooking and transfer to a bowl.
Lay bread on a cutting board and make a 2-inch incision into the side to form a pocket inside the bread. Be careful not to pierce the other side of the bread. Repeat for each slice of bread. Spoon 2 tablespoons of the pear mixture into each pocket and set aside.
Combine egg whites, whole egg, and remaining 1/2 teaspoon cinnamon; whisk together. Transfer egg mixture to a shallow 6-inch wide plate.
Heat a nonstick griddle over medium heat for 1 minute. Lightly spray the griddle with cooking spray.
Take 1 stuffed French toast and lightly dip both sides into the egg mixture, and then lightly dip each edge. Place the French toast on the griddle and cook for 1 1/2 minutes. Flip and cook for another 1 1/2 minutes on the other side. While each piece of French toast is cooking on its first side, repeat the dipping process with the next one. Once the
toast is golden brown, remove from heat. (You can keep the toast warm in a low-temperature oven while you are making the rest.) Serve with maple syrup, if desired.

This is super easy; but super delicious!
2 cups flour
1 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter
2 each eggs beaten
1 cup milk
1 1/2 cups blueberries fresh or frozen
Directions
Mix together the flour, baking powder and salt.
Cut in the butter.
Combine eggs with milk.
Combine flour mixture with wet ingredients.
Flour berries and fold gently into batter.
Bake in greased loaf pan one hour at 350 degrees.

My mother used to make a dish called "Strata." You tear up slices of white, or wheat bread and place them on the bottom of a baking dish. My mother always used ground sausage or ham, but if you would prefer no meat then spinach would be great. Put your meat or vegetable on top of the pieces of bread, then mix some eggs with a little bit of milk and whatever spices you prefer(garlic salt or just salt and pepper) and pour it over the bread and meat or vegetable. Top with cheese and bake around 30 mins on 350 or until the top starts to get golden brown. I'm getting hungry just typing about it! Hope this helps! :)

How about a nice fritata made with potatoes, zucchini, summer squash, onions along with fresh herbs. Top with slices of tomatoes and a sprinkle of cheese before finishing in the oven. Serve with thick slices of toast from a artisian bread, butter and jam. You can omit the potatoes from the fritata and do a hashbrown dish to accompany. Fresh fruit would be a nice addition.

I looooove French Toast:
2 eggs
1/4 cup milk
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
dash nutmeg
8 slices French bread (or Hallah or wite bread works too)
put the eggs in a shallow bowl and whisk slightly. put the milk, cinnamon, vanilla, nutmeg in another shallow bowl and stir together. take pieces of bread and soak in milk mixture for a minute (not too long else they will fall apart). then dip them in the egg mixture for a few second and let the excess drip off. place on hot griddle or skillet and cook until golden brown on both sides. serve warm with syrup :o) MMMM!

Crock Pot/Slow Cooker Southwestern Egg Bake
Prep time:30 minutes
Cook Time: 6 or more hours
Container: Crock Pot, mixing bowls, large skillet
Serving: 12
Ingredients
1 pound sweet Italian sausage (or sausage of choice)
1 pound ground turkey (chicken, pork, hamburger)
1 large sweet onion (chopped)
2 cloves garlic chopped
1 red pepper (chopped)
2 cans green chilies (chopped)
1 pound sharp cheddar cheese, Swiss cheese or combination of both (shredded)
18 eggs
Salt and pepper to taste
1 tablespoon Dijon mustard or any mustard of choice (optional)
Directions
* In a large skillet cook sausage and ground meat until crumbled and no longer pink.
Season to taste if desired. Drain.
* In a slow cooker/crock pot, place the ingredients in order as follows: half of the
browned meat, half of the onion, half of the garlic, half of the red pepper, half of the
green chilies and half the cheese.
* Repeat the layers with the remaining portion of the ingredients.
* In a mixing bowl, beat the eggs and mustard together. Season with salt and pepper and
pour over the top of the ingredients in the slow cooker/ crock pot.
* Cover the slow cooker/ crock pot and cook on low heat for 8-9 hours.
