They're the same. The shell color is only due to the breed of hen.

The shell color of eggs may be white or brown or other colors depending on BREED of chicken. Color does not affect quality, flavor, cooking characteristics, nutritional value, or shell thickness.

Check the grade of the eggs in either color. U.S. Grade AA and U.S. Grade A eggs have whites and yolks that stand high and are practically free from defects, and shells that are clean and unbroken. Grade B are mostly used for commercial baking or go to hospitals, restaurants, etc. Very few are sold at retail stores. Grade C is the lowest egg grade, these are used in the production of processed egg products only. They are not sold in grocery stores.

There isn't difference in the nutritional value of the different grades, though.

Chicken eggs are chicken eggs. The color is determined by the breed of chicken. They are no different. I at one time had chickens, a little extra money. I had chickens that laid brown eggs and white eggs. I even had a couple Araucanas that laid blue or green eggs. They are all the same. Well, other then I had roosters so I had fertilized eggs. Only difference was maybe a red spot in the egg.

According to the Egg Nutrition Center, hens with white feathers and earlobes will lay white eggs, and chickens with red feathers and earlobes will lay brownish eggs.

I like brown eggs because I raised on them but the doctors put me on Eggland's Best. These eggs are lower in cholesterol and I can eat several a week. The other eggs I was only to eat three to four a week. The best egg you can get is what they call range run eggs, the dark orange yolks. I am going to have to stop so I can eat supper as we country boys call it, now you city slickers call it dinner. An egg sounds good.

I haven't studied the racial dynamics of eggs but I'm sure if there's a difference then it is quite minimal and negligeble. Maybe we should learn to accept eggs for what they are inside rather than the colour of their shell. Why cant all eggs be accepted into the same breakfast plate on the same terms?

That's correct, The default color of vertebrate eggs is the white of the calcium carbonate from which the shells are made, but some birds, mainly passerines, produce colored eggs. The pigments biliverdin and its zinc chelate give a green or blue ground color, and protoporphyrin produces reds and browns as a ground color or as spotting.

It is my understanding that the color of egg has only to do with the type of chicken laying them. I live on a farm and our eggs are all different colors, Sometimes they are even speckled green, but they all taste the same and come from the same chickens.

Color is the only difference..I just prefer brown eggs, taste better to me.
