Gumbo, Once when I was watching Good Eats it showed a delicious recipie for gumbo with rice. It looked delicious. You could probably find the recipie on food network.com.

Here is a recipe for you

SPANISH RICE PORK CHOPS

1 box Spanish rice
1 can whole tomatoes
1 sm. jar pimentos
1/2 c. diced green peppers
1/2 c. diced onions
Pork chops

Spread pork chops out in a baking pan. Use the amount of water directed on Spanish rice box; add to rice and all other ingredients. Pour, uncooked, over pork chops. Cover with foil and bake at 375 degrees for 2 hours.

Sear off 4 big honkin' boneless pork loin chops ( about 6 oz. each ) in 2 Tbs. butter, margerine or veg oil, set aside reserving pan juice & bits.
In a large casserole dish add the pan drippings plus 1/4 Cup of veg oil, contents of Zatarains Spanish Rice box, 1, 15 oz. can of diced tomatoes UN-drained, 4 cloves finely chopped fresh garlic or one teaspoon of garlic powder, 21/2 Cups of water or chicken broth and 2 Cups of mixed, freshly chopped vegetables, I like onions, celery, green peppers and carrots ( you can use frozen vegetable medley and reduce the water or broth by 1/2 cup ), gently stir until thoroughly mixed. Now add the seared chops. Place them so that they are completely submerged. Cover and bake at 400 F for 40 minutes, un cover and lightly brown about another ten mins. Serves 4 VERY hungry people, total recipe time is about 1 1/2 hrs and can easily be prepped ahead.
This has become the " GO TO " dish in my home for both family and guests.

I make quesadillas. (In fact I'm doing Zatarains tonight) Just put some on a tortilla, some cheese, and fry up as usual. It also works with the black bean and rice box or the dirty rice box.

I make my own stuffed burritos like Taco Bell. You can add chicken or beef stripes, the spanish rice, re-fried beans, sour cream and cheese. I buy the extra large burrito, cook up the meat and beans and rice, and layer everything in the burrito the fry it to blend and melt everything and gets the burrito warmed up

I cook up some chicken, or keilbassa, or both and just add them straoight into the rice when it is almost done cooking. I find a little chopped celery is good in it too.

Fill tortillas with ground beef, re fried or black beans, rice, salsa, lettuce, onions, cheese, guacamole and black olives.
