how about spaghetti salad...cooked and chilled spaghetti, chopped....tomatoes, cucumbers, green onions, celery, green/red/yellow sweet bell peppers.....then pour over the mixture Italian Dressing and sprinkle McCormick's Salad Supreme over that...toss and enjoy....

Pasta salad. Some cooked tri color rotini noodles, black olives, or green if you want, tomatoes, and some italian dressing. Or they have those ones you can make from the box available @ the grocery stores now.

Personally I like making veggie pizza. Not the traditional way though. I use a cresent roll spread out on a cookie sheet for the crust, you can use a pre-made one if you like.

1-2 pkg cresent rolls
8-16 oz cream cheese (8oz for 1 pkg cresents 16 oz for 2)
1pkg powder ranch dressing
Veggies
Shredded cheese

Roll out cresents onto cookie sheet. Bake @ recommended temp until top is golden brown. Put in fridge and let it dry overnight or a few hrs. You'll know when it's dry enough to spread on the cream cheese. Take your cream cheese and add powder ranch little bit at time to taste. Do NOT use the whole pkg it will be to strong. I use about 1/2 pkg or less for 16 oz cream cheese. Make sure you cream cheese is spreadable, you can nuke it in the microwave for no more than 30 sec or add a couple tbsp of water to make it more spreadable. The just cut your veggies put them on and add you cheese. I usually use matchstick carrots, brocolli, tomatoes, and cheese. You can use any veggies you like obviously.

You could make taco salad that always goes fast and tastes good. If you want to make a hot dish I do this recipe I don't know what to call it but it is sooo good. Take 10 or so potatoes boil them until tender and then shred mix in a stick of melted butter and equal parts heavy cream and half and half for this it is a qt. each. salt to taste and bake. You can make as much or as little as you want. When mixed before put in buttered casserole dish it should have enough milk to make it loose. It will thicken during baking. 350 for about 40min or until not runny. You have to change baking time to how much is made. Believe it is so easy and everyone loves it.

Italian Pasta Salad

1 pound of Rotini pasta cooked, rinsed, and drained
1 tomato chopped
1 yellow/orange bell pepper chopped
4 green onions sliced
1 small can black olives
1/2 English cucmber cut in half moons
1/2 cup shredded cheddar cheese
1 package of Good Seasonings Italian dressing made according to package instructions or you can use 1 1/2 cups of your favorite bottled Italian dressing

Combine all ingredients and allow to chill for at least 1 hour before serving, overnight is better. Cheap and guaranteed to please!

7 to 8 ounces of shallots (about 7 or 8 large ones) -if you can?t find shallots, use an equal amount of sweet onions
1 1/2 pounds of red-skinned potatoes (about 25 to 28 very small, 3/4 of an inch to 1 1/2 inches in diameter are best, though you can use an equal weight of larger potatoes)
1/4 cup of balsamic vinegar
1/4 cup of olive oil
4 stems of fresh rosemary, each about 4 to 6 inches long
1 tablespoon of kosher salt (kosher salt will retain its crunchiness in the oven)
1 tablespoon of freshly ground black pepper

1. Peel the shallots, and chop them into pieces roughly 1/2 inch square. Place the pieces into a large non-reactive bowl. 2. Wash the pototoes thoroughly, but do not peel. If you are using small potatoes, cut them into quarters, each in a half-moon shape. If you are using larger potatoes, cut them into quarters, then cut those half-moons in half--the aim is to end up with uniform sized potato pieces that are one-half to no more than 3/4 of an inch on any side. Place the potato pieces into the bowl with the shallots. 3. Pour the balsamic vinegar and the olive oil over the potatoes and shallots. Stir to mix. 4. Remove the rosemary leaves from the stems. Add the leaves to the bowl with the previous ingredients.
5. Add the salt and the pepper to the bowl and stir again to mix.

6. Pour the contents of the bowl into a heavy 9 inch by 13 inch roasting pan (I like to line mine with aluminum foil), or into any baking dish that will allow the potatoes to be in a single layer.

7.Bake at 450 degrees F for 35 to 45 minutes. I like my potatoes pretty dark, so that the balsamic vinegar gets really crunchy on the outsides of the potatoes -if you don?t want them quite so dark, either take them out earlier at the 30 minute mark, or set the oven to 375 degrees F and roast for the full time.

Serve hot or at room temperature. The potatoes can be reheated in the oven (400 degrees F for 10 minutes) or in a wrapping of heavy duty aluminum foil.

Rice Salad
Cooked white rice
Small pieces of broccoli
small can of Mexicali corn
green onions chopped into little rings
small can of stewed tomatoes, drained
bottle of Italian salad dressing.
chopped parley
salt and pepper tp taste

Mix it all together. Let stand in fridge for several hours to blend the flavors.

This is very impressive looking and good tasting.

Get some strawberries, grapes, apples, watermelon, and mandarin oranges, cut them all up and make a fruit salad!
Or....my favorite, take some cream cheese, spread it on a tortilla, sprinkle with chives, put some thinly sliced ham or turkey on top of the cream cheese, roll up the tortilla, then slice it into little pinwheels! GOOD STUFF!
Or...get some little smokies, put them in a pan with a bottle of your favorite BBQ sauce and warm it up!
