Seen a digital SLR camera where you can only look through the viewfinder to take photos. You look at screen to view photos not take them. Is this the case with all SLR's?

Composing your pic through the viewfinder is much better as it has been pointed out here already.
In addition you won't be able to hold an SLR steady when using the screen especially with longer lenses. When using the viewfinder your forehead and nose will reduce up and down movement of the camera a lot - when holding it with your hands only 30 cm away from your head you will shake a lot more especially with longer lenses.

Well, that's right. You can only take a picture with a DSLR when looking through the optical viewfinder.
However, a handful of DSLRs on the market now allow you to look at what the sensor sees on the screen; except that you can't take a picture when using the feature dubbed 'live view'. When live view is on, you can't auto focus, or take a picture. You have to exit the live view mode and then go back to using the optical viewfinder.
Current Models with live-view: Fujiflim S5 Pro, Olympus E-410, and Canon's Mark III. I might've missed one or two.

The viewfinders on the DSLRs are a LOT higher quality than what you're probably used to with point n' shoot digital cameras. They are a joy to look though and you get used to the change after about 5 minutes.
