Well, because what makes up a person is the mental, brain side of things - the non physical. Otherwise, all you are is a big meat puppet with no sentience.
So if you die, you are no longer in that shell, that meat puppet. It is the body of you, the body of your cat - not you anymore. The "you" is gone.

Because the Bible says, absent from the body (death), present with the Lord. Obviously, the Bible is referring to the spirit (soul) of the man and not the body because the body is left here on earth, the soul is present with the Lord.
