All suggestions so far are soft fruit you could open with an ordinary knife...

If you say "hard as a nutshell", you must mean harder than that. Nuts are really fruit of course, but I think you're after things hard on the outside and soft in the middle?

I can only think of one -- a good ripe pumpkin, which has a woody shell and is a real struggle to cut with a knife. Oh, and gourds, which are similar, and even harder.
