Probably any of those would work, depending upon what it is. Even a cookie sheet w/ sides may work.
If it's a chicken or roast that will make a lot of drippings, use something w/ higher sides. For veggie roasting, a cookie sheet is fine.

We make ours in a glass cake pan all the time. Just turn the heat down 25 degrees and it will work great. We also use an 8 or 9 inch square pan for smaller quantites. It that is what you mean by "a pan for making brownies" that should work well too. Cooking time will be less, of course, for the smaller size so check it a little sooner than normal. Bert

Sure you can use a Pyrex dish if it's large enough. I don't know what size you are talking about. If you need something larger than what you have you can buy one use aluminum roasting pans at the grocery store very cheap.

If you have a rectangular cake pan handy (the kind you'd use for a 9 x 13 cake) that might work, as long as it's big enough to fit your roast into. Good luck!

Whatever the deepest pan you have is. Make sure it's oven safe (no plastic handles) if you are putting it in the oven. Roasting pans are generally very deep so go deep.

Depends on what size of meat etc you're cooking. Can use oblong shallow sided brownie pan. Just watch the time, because of the meat getting more exposure to direct heat it could dry out quickly.
If you want to give a shallow sided pan a go, a loose foil tent would help to prevent the meat drying out.

As long as your cut of meat fits in the pyrex dish, you can use that. You can cover it with aluminum foil. A deep skillet would work too, but you'd need a cover for it if you plan to cook on the range top. Do you have a Dutch oven with a cover? That'd work, too.
