I am looking for a good recipe for these cookies. Are they really just sugar cookies with cinnamon-sugar on the outside? Also, what are your feelings on how they should be formed? Should they be rolled out and cut or made like drop cookies? Any other favorite cookie recipes are welcome and I'd prefer recipes that you have tried out yourself. Thank you.

Snickerdoodles are not just sugar cookies... they contain cream of tartar and most sugar cookies do not.

I think they should be rolled into little balls, then into cinn-sugar. This way as they bake, they get a crackled look to them, which emphasizes the cinn-sugar.

I like the Snickerdoodle recipe in the Betty Crocker cookbook. Basic but great! (may be online, too... never checked)

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup shortening
8 tablespoons (1 stick) unsalted butter, softened
1 1/2 cups sugar, plus 3 tablespoons
2 large eggs
1 tablespoon ground cinnamon

Preheat the oven to 350 degrees F.

Sift the flour, baking soda, and salt into a bowl.

With a handheld or standing mixer, beat together the shortening and butter. Add the 1 1/2 cups sugar and continue beating until light and fluffy, about 5 minutes. Add the eggs, 1 at a time, beating well after each addition. Add the flour mixture and blend until smooth.

Mix the 3 tablespoons sugar with the cinnamon in a small bowl. Roll the dough, by hand, into 1 1/2-inch balls. Roll the balls in the cinnamon sugar. Flatten the balls into 1/2-inch thick disks, spacing them evenly on unlined cookie sheets. Bake until light brown, but still moist in the center, about 12 minutes. Cool on a rack.

For the topping:
3 tablespoons sugar
1/2 teaspoon cinnamon
For the cookie dough:
3 1/2 cups flour
1 tablespoon baking powder
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 cup butter
2 cups sugar
2 eggs
1 tablespoon light corn syrup
2 1/2 teaspoons vanilla extract

In a small bowl, stir together the sugar and cinnamon and set aside.
To make the cookie dough, stir together the dry ingredients.
In a bowl with a paddle attachment, cream the butter. Add the sugar and continue to mix, then add the eggs, corn syrup, and vanilla, and mix thoroughly. Add the dry ingredients and mix until blended. Chill dough 1 hour if it's sticky or difficult to handle.
Preheat oven to 375 degrees F.
Roll balls of dough about the size of a walnut then roll them in the cinnamon sugar to coat. Place on an un-greased sheet pan 2 1/2 inches apart. Bake for 10 to 12 minutes until puffed up and the surface is slightly cracked. Let cool on the sheet pan a few minutes before removing to a wire rack to cool.

This is the recipe I use in my baking business:

1 stick of butter
1/2 cup of shortening or lard
1 1/2 cup sugar
2 eggs
1 teaspoon baking soda
2 teaspoons cream of tartar
3 cups flour.

Use an ice cream scoop to scoop the dough out of the bowl into cinnamon sugar mix and then onto your pan

SNICKERDOODLES

2 eggs
2/3 cup oil
2 tsp. vanilla
3/4 cup sugar
2 cups flour, sifted
2 t. baking powder
1/2 tsp. salt
1 tsp cinnamon or 2 tsp grated lemon rind
1/2 cup sugar

Heat oven to 400.
Beat eggs with fork, stir in oil, vanilla and lemon rind (if using). Blend in 3/4 cup sugar until mixture thickens.

Blend flour, baking powder, and salt; add to mixture.

Roll into 1 inch balls. Mix 1/2 cup sugar and cinnamon. Roll balls in sugar mixture.

Place on baking sheet, criss cross with fork. Place 2 inches apart on ungreased baking sheet.

Bake 8-10 minutes. Remove immediately from baking sheet.

Variations: You may omit cinnamon and use 2 tsp lemon rind in batter, roll in sugar and bake.

Well I love snickerdoodles but I don't make them by myself. I buy them at stores (aka: Sams) but I don't know if you have any in your area (or maybe a Publix). But it depends where you live. they should be formed like regular cookies like chocolate chip and sugar! it's good that way.
