its necessary for flavor! just take a lemon, and grate the yellow part of the skin off, thats zest! only the yellow part tho, none of the white stuff

Before you juice the lemon, rub it on a fine grater to shred the peel. Don't shred down to the white pith. You just want the yellow part. And while it's not totally necessary, it's very good. The flavor is so intense. And besides, the act of getting the zest softens the lemon so it'll be easier to juice. You'll never not use zest again.

basically take a grater thing.... its like a box with little pokey things on the side and you rub a lemon up against it until the yellow outside rind of the lemon comes off. this is the zest. make sure not to get the bitter white stuff underneath though.
welll...pretty much it is necessary, and it adds lots of flavour to the lemon bars. good luck!! hope they taste yummy

Lemon zest is the grated rind of a lemon, you can omit it but it does not quite taste the same.

It's the rind of the lemon. And I have a suggestion. I use this suggestion all the time. Save this site to your favorites. http://dictionary.reference.com/ It's an on line dictionary. It won't mess up whatever you're working on to go to it, type in the word in question, get an answer immediately, and go back to what you were doing. Hope this helps.
