I can put pepper on myself if i want it. is there any benefit to it being done fresh?

It has more flavor when it is fresh ground. I think they use a large one so that they don't have to refill it as often.

Fresh pepper is better than preground.

They use big grinders and do it for you because they think it shows a higher level of service and even some entertainment value.

They don't leave grinders on the table because they know customers will steal them.

It just looks better for the enormous grinder. Yes there is more of a better taste of pepper where it's being ground fresh. Most gourmet restaurants do this.

It is a service offered by moderate to high class restaurants. Many people like the taste better. The larger grinders are often better than the little ones you can get to use at home or put on a table. The service is similar to that of having the server hand you your cloth napkin to place on your lap when they seat you, keeping your water glass filled, etc.

oh yes, freshly ground pepper from fresh peppercorns taste so much better than the ground pepper. This is a service offered to you by the establishment, sit back and enjoy it! I wish more restaurants did this.

Some prefer the taste of fresh pepper. And if a waiter does it for you, it's probably because he's been told to by his boss.

It does taste better fresh but I would rather that they put grinders on the table instead of the waiter doing it. I guess they think it makes them look more posh.

Some people think it tastes better fresh; to me, the difference in taste isn't remotely enough to have some bozo hovering over me to grind it!

I detest obtrusive, obsequious service! A waiter is supposed to be unobtrusive, and the dude standing there with the grinder as big as his leg just doesn't qualify!!! ;-)

The taste of freshly ground pepper is so different from pre-ground. The oils are fresh and you can have it finely ground or coarsly ground. I love big, fat cracked peppercorns on a fresh salad.
