my recipe says to put 200ml milk in a pan with 2 1/4lbs of sugar and 4oz butter then heat till sugar dissolves but mine never seems to. how long should I leave it?

You don't say how much heat. You should heat it on medium, stirring to keep it from sticking or burning until the butter melts and the sugar dissolves. This should only take about 10 to 15 minutes if you have the heat turned on high enough.

that is less than 1 cup of milk for ½ of a 5-lb. sack of sugar. Doens't sound like enough liquid to me.

This could take awhile to melt, and will probably be very dark brown when it finally does.

Not sure how long it will take but make sure you keep stirring it otherwise the sugar will burn.
