I love corn flake chicken! I've never fried it using corn flakes, but the baked recipe it just the best, and SO easy !
CORN FLAKE CHICKEN
1 sm. can evaporated milk
1 egg
Cut up chicken
Salt and pepper to taste
Kellogg's corn flake crumbs
Beat egg well. Stir in milk. Dip chicken in milk and egg then roll in corn flake crumbs. Place in foil lined pan. Season with salt and pepper. Bake at 375 degrees for 1 hour.

Good question: Over the years, I've made thousands of pieces of fried chicken, and the hands down favorite is something called PANKO, a type of Japanese breadcrumb, that is available in the international section of large supermarkets, or in Asian grocery stores......use them to bread the chicken as you would the cornflakes, but when they're half done frying (on both sides) THEN finish them off in a 350F oven till they're done.........I've found this to be the best way, both with bone-in and boneless breasts......Enjoy!!!

I much prefer fried chicken using flour and spices. Ive also used cornmeal mixed in with the flour. Never actually had the cornflake chicken.
