1) Sprinkle it with lemon pepper, pan fry in 1/2 tbsp melted butter and 1/2 tbsp olive oil for about 3-4 minutes per side

2) Put it in a greased shallow pan, cover it with a salsa made from corn, black beans, onions, green peppers and tomatoes, and bake for 10 minutes at 375.

3) Rub with a mix made from 1 tsp dill, 1 tsp rubbed sage, 1 tsp black pepper, and 1/2 tsp salt. Pan fry as above or bake covered for 10 minutes at 375.

4) Buy bottled sesame ginger marinade, marinate for 15 minutes and pan-fry.

These recipes will work with any mild white fish such as cod, scrod, haddock, tilapia or flounder.

Stuffed Flounder
INGREDIENTS
1/3 cup butter
1/2 large onion, minced
1 bunch green onions, chopped
1/2 green bell pepper, chopped
1 stalk celery, minced
3 cloves garlic, minced
1 pound crabmeat, shredded
1/4 teaspoon Cajun seasoning
1/2 cup dry bread crumbs
salt and pepper to taste
2 tablespoons butter, softened
4 pounds whole flounder - cleaned, rinsed and dried
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish or a baking sheet lined with tin foil.
Heat butter over medium-low heat in a large saucepan. Stir in onion, green onions, bell pepper, celery and garlic. Cook slowly, stirring occasionally until onions are soft.
Remove pan from heat and stir in shredded crabmeat, seasoning, bread crumbs, salt and pepper.
Rub flounder skin and cavity with butter. Stuff with crab mixture and place in prepared pan.
Bake for 30 minutes, or until flesh is firm and white at the thickest part of the fish.

Love flounder!
You can bake it seasoned with some lemon pepper and butter and thyme.
Bake at 350 for about 30mins. done when flaky

Dip it in beaten egg, then coat with bread crumbs and fry in oil till golden brown on each side. Serve with lemon or tartar sauce.
