Well...
I like to add some Franks Red Hot to enhance the flavor. It's not TOO spicy, but it has a robust bold flavor that makes your mouth jump for joy. I also add apples that have been chopped up into moderately small pieces. It sounds weird, but it gives a little sweet kick to a good can of tuna.

My husband likes to add a tbsp. of dehydrated onion flakes to the mayo and let it soften before adding the tuna. He also loves to add left over coleslaw to the mix. Gives it some crunch.

you could add just about anything that would normally be found in a tuna salad, (sweet relish, mustard, salt and pepper, etc). but if you want to be a little different, I would go with some white pepper, very distinct flavor, or get a little crazy and add some crushed saltine crackers for different texture as well as some saltiness.

I make my tuna salad with boiled egg chopped fine, red onion, black pepper, capers, light mayo and red pepper.
I make it the same for my husband, but he likes jalepenos instead of capers and no egg.

Try sprinkling roasted sunflower seeds on top. I was once served a tuna sandwich that had roasted sunflower seeds on it. It was was absolutely delicious
