Wood. This process started out as wood, even though it is now made of many different products. Plastic will expand and contract more than wood and can cause a bad look over time.

what is your budget , if you got lots of money to burn go for wood but if you want to go cheaper try to use plastic ,the only advantage of using plastic is you can bend or heat it to bend corners

Wood looks better. It's "wainscoting."
