I make a casserole
1 pound Hamburg
4-6 potatoes boiled
2 cans cream of chicken or mushroom soup
2 cans of whole kernel corn
Fry the Hamburger up and drain it
after the potatoes are soft peel and slice them
then add you soup and corn
layer all these together and bake for about 20 minutes and salt and pepper to taste.
My kids like this.
I also make Taco salad I use Doritos,the ranch ones and I use Catalina dressing it really makes a Great meal.

Sloppy Joe's, Tacos, Taco Salad, Meatloaf.
For a taco salad I like to put Frito's or Taco Chips on the bottom, then the Taco meat, cheese, tomatoes, lettuce, onion, sour cream.. yumm!
Or try a stir-fry. Get some fresh or frozen veggies and saute them in canola oil, make some brown rice, brown the ground beef, then stir it altogether with spices that you like such as garlic, onion,....anything.
Or.. you can make a breakfast casserole. My family likes breakfast for dinner. Brown the ground beef and put it in the bottom of a 9X13 pan. Then scramble (just mix not cook) eggs with anything that you like in an omelet.. peppers, onions, etc. Then poor the egg mixture over the beef and top with cheese. Cook in the oven until the egg mixture is done. About 350 degrees for maybe 20-30 minutes. Keep an eye on it so you don't overcook the eggs. If you want you can also put some kind of bread on the bottom, torn up pieces of white bread or biscuits.

Like mexican?
Enchilada Pie
1pound hamburger meat
1 package taco seasoning
1package flour tortillas
1can enchilada sauce
1can refried beans
cheese
Prepare meat as directed on seasoning package.
Spray a deep casserole dish and put in a few Tsp of sauce.
On a tortilla, spread beans just like you would peanut butter.
Place in casserole dish. Add some meat and then a little sauce. Repeat till meat and beans are gone. Top with remaining sauce and cheese. Cover.Bake at 375 degrees till bubbling, around 30 minutes.
Top with lettuce, sour cream, tomatoes or whatever you like.

We like to make taco bake or what we jokingly call Mexican Lasagna since we are Italian. You just get some flour tortillas, cook your beef in taco seasoning and then put your oven on 350 degrees then make layers of tortillas, meat, cheese, and salsa. Its really good to top it off with so sour cream when you pull it out of the oven. The kids really like it alot. I think there may even be a taco bake kit you can buy over in the Mexican Foods section.

Fry and drain the ground beef. Return it to the skillet and add a large can of your favorite pork and beans or baked beans. Toss in some steak sauce and about 1/2 cup of brown sugar. Serve as is or over buttered bread slice.

-Sloppy Joes (you can buy a can of Manwich sauce and buns and be done with it) :)
-Meatballs (mix your ground beef with seasoned bread crumbs and spices, add a little oil or butter, egg, and they are yuuuummyyy)
-Meatloaf (top with barbecue sauce instead of ketchup...makes all the difference)
-Pita Pockets (roll the ground beef into smaller balls or patties after seasoning with soy sauce and steak spices. Fry or bake, stuff into pita pockets, and pour a sauce over the top (I make a sort of tzatziki that's super easy and a good change than the usual...mix plain yogurt, dill, onion, garlic, and cucumber in the mini-processor or blender)

I go through this all the time. I hate making the same stuff over and over.
Here's a few recipes I found on the net awhile back and use. I usually have all the ingredients on hand so it's easy as heck for me. Hope they help you too.
Easy Ground Beef Casserole with Potatoes
INGREDIENTS:
1 to 1 1/2 pounds lean ground beef, browned
1/2 cup chopped onion
salt and pepper
3 large potatoes, sliced
2 Carrots, shredded
1 can cream of mushroom soup
1 cup shredded Cheddar cheese
PREPARATION:
Brown ground beef in a skillet with chopped onions; cook until onions are tender. Drain off excess fat; transfer ground beef and onion to casserole dish. Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred carrots to cover potatoes.
Put soup over carrots. Bake at 350° for 40 to 50 minutes, or until potatoes are tender. Sprinkle shredded cheese over top and bake for about 5 minutes longer, or until cheese is melted.
HAMBURGER STEAK
1 lb. hamburger
1/2 c. evaporated milk
1 tsp. salt
1/2 tsp. pepper
2 tbsp. butter
1 c. flour
1 can mushroom soup
Mix together meat, milk, salt, pepper. Shape into 4 steak-size patties and flour each side. Brown in butter in skillet. Drain off fat. Add mushroom soup and 1 can of water, cover skillet and boil until well blended. Vary steak with onion soup or chili sauce.
EASY GROUND BEEF STEW
1 lb. ground beef
1 onion, chopped
6 carrots, sliced
6 potatoes, cubed
1 c. canned tomatoes
1 tsp. salt
Simmer beef and onion in dry skillet. Add remaining ingredients, cover and cook slowly until vegetables are done.

Ingredients:
1/3 tbsp. olive oil
1/4 medium red bell pepper
1/4 cup chopped onion
3 oz. of lean, ground round beef
1/4 tsp. garlic powder
Directions:
In a nonstick skillet, heat oil on medium. Rinse and chop pepper. Sauté pepper and onions 2-3 minutes until onions are translucent; remove from skillet; let cool. Mix pepper and onion mixture with ground beef and garlic powder; form a patty and pan fry on both sides until meat is cooked to desired degree of doneness. Serve.

You could make chicken fried steak. Just like a hamburger just coat it in egg, and dip it in flour or bread crumbs.
Just grill it, a little beef broth and a few potatos. You could have chicken fried steak with mashed potatos and gravy.
I like the stuffed pepper idea but that is expensive if you are on a budget.

My Family loves Taco Soup;
-1 Can of Kidney Beans, Drained
-1 Can of Black Beans, Drained
-1 Can of Pinto Beans, Drained
-1 Can of Corn
-1 Can of Stewed tomatoes
-1lb of ground beef cooked
-1 Package of taco seasoning.
I put it all in a crock pot as soon as I get home. About 1 hr and you have dinner. Top with Sour cream and Cheese. We also use chips and eat it as a dip sometimes.
