I do not put broth in meat loaf. I use ground beef, eggs breadcrumbs, salt pepper, minced onion and maybe diced green pepper and garlic powder.

If you want the chicken flavor, dissolve chicke bullion into an amount of water equal to the quantiity of Stove up chicken broth your recipe calls for. Otherwise, you might try simply seasoning some water to substitute. The Chicken broth mainly adds seasoned moisture to your meatloaf, so if you want to try something new, try another equal amount of water with the seasoning of your choice. Experiment and you might find something you like better than chicken broth in that recipe.

you can use beef broth, or substitute with a package of beef bouillon, a small can of tomato sauce, and some worcestershire sauce (or A1). I wouldn't use chicken broth though, or plain water because I don't think either would add good flavor.
