I would not add herbs to mac and cheese. It's comfort food and bland so anything in large quantities will really stick out.

Chives are great in macaroni and cheese - add as much as you like.

good for you for wanting to add real herbs to mac and cheese. my fave was always just a bunch of seasoning salt. :-)

Parsley is mainly used for looks - not flavor.
You can use Thyme, Basis, Oregano, Marjoram or even Chervil. "It's ALL good"!
