Basil-Stuffed Chicken
-Boneless, skinless chicken breasts
-light mayo
-2/3 cup bread crumbs (seasoned or not)
-1/3 cup parmesan cheese
-large tomato
-fresh basil leaves (or dry basil flakes)
-mozzarella cheese
1. With a sharp knife, split the chicken breasts, not completely splitting (they should open like a book).
2.Brush the mayo onto the entire outside of the chicken and coat with a mixture of the bread crumbs and parmesan cheese.
3. Open the chicken and layer the basil, tomato slice, and mozzarella slice inside (salt & pepper to taste if you want). You may want to use a toothpick to hold everything together.
4. Broil the chicken close to the heat for 3-10 minutes per side, depending on the thickness of the chicken, flip and repeat.
The cheese will melt out and be really gooey, but it's delicious. This serves well with either rice or potatoes and a side salad.

I like omelets: They're really healthy and tasty! I'm a kid (14), and I love em'! So your kids might like them too. Here is a recipe for a vegetable omelet, which is one of my favorites. It takes about 15 mins to make.
You need:
1. 2 eggs
2. Onions (chopped)
3. Red and Green Bell Peppers (Diced)
4. Garlic (Minced)
5. Salt and Pepper
6. 1/2 cup of Cheese
7. Two pats of butter
8. A teaspoon of milk
What you need to do:
1. Get out a large frying pat, set it to medium heat, and put a pat of butter in it.
2. Add the garlic, and once the butter melts, add the rest of the vegetables.
3. When the vegetables are fryed and crispy, take them out and set them on a plate.
4. Crack the eggs in a bowl and add the milk.
5. Add a little salt and pepper to the eggs for seasoning, and beat the eggs with a fork.
6. Get out a pan and put a pat of butter in it.
7. Pour the eggs in the pan, and when the edges look a little foamy, use a spatula to put them to the middle. The eggs from the middle will go out to the sides.
8. When you are done with this, if there is still a little raw egg in the middle of the omelet, use your spatula to put it somewhere where it will get cooked.
9. When all of the egg is cooked, take the cheese and sprinkle it over the eggs. Next take the vegetables off of the plate and put them on top of the cheese.
10. Use your spatula to fold the omelet over, put on a plate, and enjoy!
Makes one serving.

Tara Slaw--Cole Slaw with a twist
2 Bags Dole Cole Slaw Mix
2 Packets of Beef Flavored Ramen (crushed and uncooked)
1 Cup of Sunflower Kernels (no shells)
1 Cup of Sliced Almonds
1 1/2 Cups of Dried Cranberries
3 Scallions Chopped
Toss everything above very well in a REALLY big bowl
1/3 C. White Vinegar
3/5 C. Canola Oil
1/3 C. Sugar
2 Beef Flavor Packets from Ramen
Whisk together very well and pour over slaw mixture...Toss well, cover and chill for at least 2 hours.
This cole slaw is not that bad for you and is totally different and gets better everyday (for about 4-5 days anyway) :)

BBQ Brisket
I use the cryovac brisket(you need the fat, it is what helps make the meat fall apart and stay moist)
Put the brisket in a large roasting pan without the roaster tray in it. Season with salt, pepper, garlic powder, worchteshire sauce and then pour 1 or 2 beers over it(depending on the size of the brisket).
Bake at 250 for 5 or 6 hrs. (untill the fat scrapes off easy)
Drain all the liquid and scrape off all the fat. Cut cross grain and layer in a pyrex pan with your fav BBQ Sauce then put back in the oven for 20 min to reheat.

Ingredients ( Serves 2 )
Penne Pasta - 1/2 pound Ripe Roma Tomatoes - 1 cup, finely chopped ( Or 10 oz crushed tomatoes - canned ) Tomato paste - 1 tbsp Garlic - 2 cloves, medium size, finely chopped Red chilli flakes - 1/2 to 1 tsp Dried Oregano - 1/2 tsp Fresh Parsley - 1 tbsp, finely chopped Olive Oil - 2 tbsp Salt to taste Freshly grated parmesan cheese Method
In a large pot of boiling salted water, cook pasta al dente according to package instructions.
Meanwhile, heat oil in a deep skillet or pot. Add chopped garlic and saute` until fragrant.
Next add red chilli flakes, dried oregano and chilli flakes, saute` for 5 to 10 seconds and then add crushed/chopped tomatoes, tomato paste, salt to taste and mix well.
Simmer over low-medium heat for about 5 to 8 minutes or until the tomato sauce has reduced a little bit.
Add cooked pasta, chopped parsley and toss until mixed well.
Serve hot with freshly grated parmesan cheese.

My favorite comfort food is spaghetti and meatballs. This recipe I got at allrecipes.com, and it takes about 2 hours to make, but it's worth the time and I can't resist it!!
MEATBALLS
1 pound lean ground beef
1 cup fresh bread crumbs
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
1/4 teaspoon ground black pepper
1/8 teaspoon garlic powder
1 egg, beaten
SAUCE
3/4 cup chopped onion
5 cloves garlic, minced
1/4 cup olive oil
2 (28 ounce) cans whole peeled tomatoes
2 teaspoons salt
1 teaspoon white sugar
1 bay leaf
1 (6 ounce) can tomato paste
3/4 teaspoon dried basil
1/2 teaspoon ground black pepper
In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

4 small scoops vanilla ice cream, about 2/3 cup
1 ounce mezcal
6 ounces orange soda, chilled
Drop the ice cream scoop into a chilled soda glass. Pour the mescal over the ice cream, and then the orange soda. Serve.

Pantry Enchilladas
1 box spanish flavored rice mix. I like zatarains or goya
1 small onion and gr. pepper chopped
1 can corn kernals
1 sm. can diced jalepeno's mild
1 bottle either salsa/bottled enchillada sauce
1 tub Chi chi's brand seasoned/cooked taco meat (chicken or beef)
or 1 lb ground beef seasoned/cooked with taco seasoning or shredded chicken seasoned/cooked with taco seasoning...
1 lb. pkg mexican style shredded cheese
1 pk of burrito sized tortillas
make rice according to pkg. directions..Add corn, gr. pepper and onions and canned jalepeno.....*You can add kidney beans as well....or serve refried beans on the side.
heat tortillas in micro between damp paper towels for about 30 sec or until plyable
fill burrito's with rice mixture top with salsa/sauce and cheese....Bake until cheese melts... Serve with refried beans on the side...Top with sour cream....Yummy.....
