I believe there's concentric rings on or in some bone in their head (i think), and they play it kinda like trees or turtles... BUT I know for a fact that you can't always trust the number of concentric rings on a turtle shell, probably just gives an approximation. Anyway, there ya go.

Determining a Redfish age by the growth patterns on the otolith is the best way, yet individual fish from the same egg hatch vary, especially when comparing growth rings of female to male fish.

Once again (and it comes as no surprise), I got to say that gimmenamenow REALLY knows her stuff.
