Well this can be made anytime of the year, but I make it alot during the summer because it has a tropical taste to it.
Pig Out Cake
1 box of yellow cake mix
1 small can (11oz) of mandarin oranges, undrained
1/2 c. oil
4- eggs
Icing:
12-16 oz Cool whip (I use 16 oz)
1 lg. can crushed pineapple, undrained
1 sm. pkg. instant vanilla pudding
Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
Combine icing ingredients and spread on cooled cake.
Cake does need to be refrigerated until ready to serve.
* I sometimes add flaked coconut to the icing mixture.

Mmm. There are so many but a savoury one which is a comfort to me is as follows:-
Matjes herring fillets in oil - cut into 1/2 inch cubes
Cherry tomatoes -halved
Red onion - finely diced
Baby boiled potatoes halved if larger - or you could use older potatoes cubed.
Hard boiled eggs - 1 per person lightly diced
Pickled gherkins in brine - finely diced or cornichons whole
Garlic (crushed and optional)
Mayonaise and soured cream (Smetana is best but could also use creme fraiche. Half and half or to taste.
Salt, Pepper and lemon juice and dill and parsley.
Starting with the garlic, mix dressing ingredients and check seasoning. Allow to stand to develop flavours
Prepare everything else and toss into the dressing. Best served warm with bread, but is fine cold too. Enjoy like I do!!!!

Homemade Butterfinger Ice Cream
6 eggs beaten
1 1/2 cups of sugar
1 Tablespoon of vanilla
1 can of evaporated milk
1 box of vanilla Junket (usually sold by the ice cream toppings)
3 packages of the mini Butterfingers (I think there are like 10 in a pack)
Crush your Butterfingers into small pieces. I usually put them all in a gallon baggie, wrap them in a towel and beat them with a rubber mallet. Mix all of your ingredients together, except for Butterfingers. Pour in your ice cream freezer. Then put all of the Butterfingers in there and fill the rest of they way to the fill line with milk. Then freeze according to the directins of your ice cream freezer!
I promise you this will be the best ice cream you will ever eat!!! It's a hit wherever I take it!

Cucumber, tomato salad with red onion!
Cukes, tomatoes, red onion, italian herbs, vinegar and oil - let sit over night.
Old italian standby but it rocks and I just love the taste of the fresh veggies and the mixture of the fresh herbs - especially the fresh basil.

mine is a drink recipe for my fave... Sun Tea...buy some Lipton ice tea packets and put them in a pitcher w/ cold water & set it in the sun. let them brew until it becomes a brown color, take it out of the sun & taste it. if its not strong ebough put it out longer. if its 2 strong add water. when its just right add lemon & sugar 4 flava...enjoy

go to grocery store. buy the biggest, seedless watermelon you can find. Ice it down in an ice chest for a few hours. When chilled, cut it open and ENJOY ! (some people I know, inject them with Everclear !)
