Quickly get all other guests out of the area, then have one escort the sick one to the bathroom while you quickly clean up the table. Offer a bed or couch so the sick person can lay down.
At this point, dinner is probably shot - might offer everyone a cocktail and take a break before trying to serve dinner again.
Hopefully the food didn't get hit when the guest got sick - if so, obviously that is no longer an option!
Lastly - just try to find the humor in the situation - it will make the guest feel better and everyone else feel more comfortable. It could be you someday so think how you'd want it handled if you were the sick one.

After inquiring as to the health of the guest ("Are you alright? Are you feeling ill and need to leave?"), calmly, quietly, as if nothing extraordinary had happened, get up, get whatever supplies you need to clean up the mess, and calmy, quietly clean up the mess. If you have a table cloth on the table, it would be best to remove and replace it if at all possible (depending upon the number of guests and complexity of your "set up").
When you are finished disposing of the offending material, if your guest is feeling well enough to continue, you all politely continue your dinner as if nothing happened. If your guest has excused him/herself and left the party due to further illness, then you continue without the guest.
After your party is done, you can make polite inquiry as to your guest's health the next day, or later that evening, and wish them a speedy recovery or hope they feel better soon. This is done after all guests have left, or in a separate room from your guests, so as to not to interrupt their social evening. If someone inquires of you as to the status of the ill guest, you politely, and quietly inform them of the status as you know it.
There are times... and this is one of them... when "bodily functions" are to be ignored as if they did not happen. This spares the ill guest any FURTHER embarassment, which is what your attention should be focused upon... after you are satisfied as to any health issues which may need more immediate attention (leave the party, call an ambulance, etc.).

Escort the guest to a restroom. And clean up. I would have said they shouldve turned their head and threw up on the floor, but I had a situation when I was in my friends car and threw up all over the inside! I had no time to roll down the window, sometimes it just comes up with no warning.

What a strange question.
I'd give them a towel and directions to the bathroom to get themselves cleaned up, then clean the mess on the table while they were in the bathroom. I'd offer a soda or ginger ale to help settle the stomach. If their clothes got it, too, I'd at least offer to loan them a shirt. If they needed pants and we wore the same size, I'd offer those, too. And I would try to be light about it, because they would probably be extremely embarrassed and apologetic. Vomit cleans up pretty easily, and it's not like they did it on purpose.

Assist the sick guest and see if he needed any help; he'd have to be truly sick or have a bad allergic reaction because I do not serve the amounts of alcohol that will cause people to throw up at my parties. Therefor, I'd worry about him first and clean up later.

I'd try to find out what's wrong with the guest and get him or her medical attention if he or she needed it.
I'd also change the tablecloth.

I'd change the tablecloth and then politely ask that person to leave.... and if they couldn't drive I'd offer to delagate a driver to escort them home.
