Salt and Pepper the chicken and brown it in a skillet with a little olive oil. Remove chicken and in the skillet saute some garlic, onions, mushrooms, if you have any of those things. Put the chicken back in the skillet and cover. Cook about a half an hour until the chicken is done. Put the Swiss cheese on top of the chicken, cover and cook until the cheese has melted. Remove the chicken from the pan, and put the garlic, onion, mushroom mixture on top of the cheese. Serve with vegetables of some sort and rice or potatoes.

If you have ham, then ham and swiss are excellent in so many ways - a simple hot ham and swiss sandwich or an omelet (actually you can just make a swiss cheese omelet) or quiche with spinach or broccoli and swiss. Chicken and swiss is probably the best combo out of the meats you listed.
Sorry your husband didn't like the swiss, but it's probably my favorite cheese to use.

Swiss Cheese Chicken
4 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons all-purpose flour
3/4 teaspoon pepper
1/4 teaspoon salt
2 slices Swiss cheese, cut in half
1 tablespoon butter
1/2 cup chicken broth
1/4 cup white wine or additional chicken broth
1/4 teaspoon dried oregano
DIRECTIONS
Flatten chicken to 1/4-in. thickness. In a shallow bowl, combine the flour, pepper and salt. Place a piece of cheese on each piece of chicken; tuck in ends and roll up. Secure with toothpicks. Roll in flour mixture.
In a large nonstick skillet, brown roll-ups in butter on each side over medium heat. Stir in the broth, wine or additional broth and oregano; bring to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until chicken juices run clear. Remove toothpicks before serving. Yield: 2 servings.

CHICKEN SWISS CHEESE BAKE
1 - 1 1/2 lbs. chicken (boneless) breasts
Onion
Swiss cheese
1 can cream of chicken soup
1/4 lb. butter (melted)
Pepperidge Farm Herb Stuffing Mix (blue bag)
Boil chicken for 10 minutes with sliced onion. Spread chicken pieces out in a 9x9 pan. Cover with Swiss cheese, cream of chicken soup and 1 can milk.
Mix butter and 2 cups of Pepperidge Farm Herb Stuffing Mix (blue bag). Sprinkle over chicken and Swiss cheese mixture. Bake 350 degrees, 45 minutes - 1 hour.

If you have ground beef:
BEEF CASSEROLE
4 potatoes, cooked until tender
1 1/2 lbs. ground beef
3 tbsp. Butter
1 lg. onion, finely chopped
1 sm. red bell pepper, thinly sliced
1 clove garlic, minced
Salt & dash pepper
2 tsp. red wine vinegar
1/4 c. chopped parsley
Dash paprika
Dash nutmeg
1/4 c. milk
1/2 c. Swiss cheese, shredded
Brown ground beef. Mix in onion and red pepper until onions are limp and browned; drain. Mix in garlic, salt, pepper, vinegar and parsley. Place in a 2 1/2 quart casserole. Mix potatoes, butter, paprika, nutmeg and milk. Add more milk if necessary until smooth and salt to taste. Spread over meat mixture and sprinkle with cheese. Bake at 400 degrees for 20 to 25 minutes or until lightly brown.

Get the pork out and roast it with salt and pepper. Slice it and add rinsed saurkraut with caraway seeds and 1/2 rsp of mustard seed. Heat through, add the swiss ontop and serve on grilled rye bread for an open german style pork sandwich. Serve with a side of Thousand Island Dressing.

Use the chicken. That would taste best. Otherwise, eat the Swiss cheese like that. Swiss cheese is soooooo good!

You can butterfly and stuff the chicken breast with the swiss cheese by itself, or with spinach or mushrooms and bake, covered. Or you can make a quiche and have the meats another day.

I love swiss cheese in the following:
- Grilled cheese made with swiss and cheddar
- Ruben Sandwiches (super yum)
- Fretta (frittat, frittatta, etc.)
- Omelets
- Melted on the grill over sliced baguettes drizzles with olive oil and fresh herbs and zucchinis
So many ideas, I got my mouth watering!
