Mmmm.... half and half oj and olive oil. Minced fresh cilantro and minced jalapeno. Add a couple splashes of tequila. Mix well and coat the fish. Grill 4-5 minutes per side. Squeeze lime over fish and serve. Tasty.

For starters, there are plenty of herb blends on the market available at your grocer. I would look at what's appealing to you. However, the other ingredients in the recipe may make a difference in the taste or the outcome you desire. Personally, I prefer a seafood seasoning, "Seafood Grill & Broil" by The Spice Hunter. It's a mild blend of herbs and spices and it's salt free. I squeeze a lemon or lime half on the fish then sprinkle with the seasoning and bake @ 400 degrees for about 10-15 minutes. Herbes de Provence would be wonderful on Tilapia. Sometimes you can find it at the grocer or see the following site for recipe:

I like Tilapia with just some butter, a sprinkle of soy sauce, a few capers, and a squeeze of lemon.

tilapia with herbs:
(4 ounce) tilapia fillets
4 teaspoons butter
1 teaspoon garlic powder
1 1/2 teaspoons dried rosemary
1 tablespoon dried dill weed
1 teaspoon salt
1 teaspoon black pepper
1 1/2 lemons, sliced
1. Place tilapia in a glass baking dish in a single layer.
2. Mix herbs in a bowl, and mix together.
3. Sprinkle herb mixture evenly over fish.
4. Cut butter into small chunks and place evenly over tilapia.
5. Place sliced lemons over fish and butter, about 2-3 slices per piece.
6. Cover pan, and bake at 350 until fish is done, about 20 minutes.

Rockfish is essentially a white fish (white "meat") like tilapia. We have found that recipes are nearly always wonderfully interchangeable. And if your rockfish is fresh, yahoo! It was be very good with your lemon and herb recipe. We like to top our tilapia with panko or breadcrumbs. Panko is nice because it can combine herbs, lemon and nuts (pecan, macademia, etc.) to produce a really nice flavor. Good luck! Did you get the rockfish from the Chesapeake Bay? That's always such a fine rockfish.

it is important to remember that Tilapia has a very mild flavor compared to Salmon for example so the ideal herbs to use would also be mild to compliment the flavor. you don't say what the recipe is or what you will serve with the fish (very important) try lemon thyme, dill, lemon verbena ( a little strong) tarragon, chives, parsley, or even basil.
depending on the cooking method suggested - poaching, steaming (sexy with Ginger), try a mixture or singly any of the above. enjoy

depends actually on how you want to cook it. i love steaming tilapia(asian style) so i shred very finely some young ginger and lemongrass, salt, pepper
but if you want them thai-style deep fried, try shredding very finely some unripe mangoes, shallots, red chillies and some fish sauce. dont forget to deep fry the tilapia first the prepare the fish sauce, mangoes shallots and chilies salt and pepper by combining them in a low heat pan. add some sugar if the mango is too sour. then pour sauce over the fried fish, enjoy!! my mouth is watering, good luck

Tilapia is a "non fishy" kind of mild fish. Rosemary /salt/pepper/garlic powder gives it just the RIGHT kick.
