This recipe will knock your socks off!! It is SO GOOD, you won't believe it. The sour cream and sharp cheddar add some tang to it, and the cream cheese gives it that yummy cheesy consistency!! Very good as a side dish for any BBQ!!
PS - I've been asked for this recipe so many times, I can relay it in my sleep!! EVERYONE...kids, grownups, finicky eaters....LOVES IT!! Good luck and Happy Fourth!!
CREAMY CHEESE POTATOES
serves 8
6 potatoes, peeled and chopped into small cubes
1 can cream of chicken soup, or a little over 1 cup of homemade
1/2 cup sour cream
4 ounces (1/2 package) cream cheese
3/4 cups grated sharp cheddar cheese
1/4 cup sliced scallions
1/4 cup milk
3 tablespoons fresh Italian parsley, chopped
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
In a large saucepan cook potatoes, covered, in enough boiling salted water to cover for 10 to 12 minutes or until tender. Drain and rinse with cold water.
Mix the soup, sour cream, and cream cheese. Stir in the grated cheese, green onions, milk, garlic, and salt and pepper. Stir in the cooked potatoes. Transfer mixture to a 2-quart rectangular baking dish.
Bake in a 350ºF oven for 25 to 30 minutes or until heated through.
FYI - ALMOST FORGOT TO MENTION...If you already have a potato dish, you can substitute 2 large bags of frozen corn for the potatoes in this recipe and it is EQUALLY as YUMMY!! Do not thaw the corn before baking, and omit the milk.

This is a favorite for potlucks.
Hashbrown Potato Casserole
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45-55 minutes.
I know this may sound weird but this really is good and different.
PINEAPPLE AU GRATIN-
1 c. shredded cheese
3/4 cup. sugar
20 oz. pineapple chunks in juice
3 tbsp flour
1 package ritz crackers
1/2 stick margarine, melted
Drain pineapple, reserving 1/2 cup juice. Combine cheese, sugar and flour. Add pineaple juice and then pineapple. Crumble Ritz crackers on top. Spoon melted butter on top. Bake at 350 degrees for 20 minutes or until bubbly.
I'm sorry I dont have exact measurements, but the meat really gives it a unique flavor.
Baked Beans
4 or 5 cans of campbells pork and beans then add ketchup, mustard, brown sugar, chopped onion, karo syrup, and lil smokies and bake them in the oven for 35-45 minutes at 350'.
i sometimes use beef smoked sausage or kielbasa pieces instead of the lil smokies. =0)

Marinated Salad
Broccolli, Caulifour, Carrots, green, red, yellow, orange peppers, cucumber, Cherry tomatoes, Mushroooms, Zuccinni, Celery. Make to what ever size you may need and use portions of your liking so it has lots of colour. Use Kraft Italian dressing and cover all veggies. Put in fridge and toss once in awhile. Best if made the night before, but needs to be done at least 5 hours beofre dinner. Add Mushrooms and Cherry tomatoes a few hours before dinner cause they don't need as long.

Although it has mac in it......this is a quick awesome dish.
1/2 stick butter melted
1 can whole corn
1 can creamed corn
1 c velveta
1 c mac.....i use small shells
diced onions
1/2 c milk
Cook covered in a 350 oven for 30-45 min.
Even if its not ok for your bbq......its a dish all will love.

How about this really good recipe for Jack Daniels pork and beans.
1 reg can pork and beans.
2 tbls brown sugar
1 tsp mustard (not dry)
1/3 cup Jack Daniels
1 tsp instant coffee (do not leave this out!)
Combine and bake at 350 for 40 to 45 minutes.

CHUCK WAGON BEANS
2 lbs. ground (chuck) meat
1 lg. onion, chopped fine
2 lg. cans tomato paste
1/4 tsp. garlic salt
1/2 tsp. chili powder
1/2 c. brown sugar, packed
1/2 c. sorghum molasses
1/2 bottle Masterpiece barbecue sauce (mesquite flavor preferred)
2 cans Showboat pork and beans
3 tbsp. cooking oil
Mix castor oil with pork and beans in a small bowl and let stand to add as last ingredient (castor oil is not tasted, but helps cause no gas from beans). In large iron skillet, heat 2 tablespoons oil to grease well (or spray with skillet spray). Add ground beef and onions and brown, stirring often to break up meat. Then add remaining ingredients (except beans and castor oil).
Cook until meat is done (all pink color gone) and onions are clear. Stir well, add beans and oil. Turn to low and simmer for 20 minutes, stirring occasionally. Put into a large casserole or bowl and serve. Makes a large meal. We eat crackers with it, and have no gas after.

I like taking zuccini slicing down the middle putting spices on them and fresh ground parmasan cheese they are good on the grill and good cold or hot...also a fresh made corngrilled salsa and chips does well..easy to make and people love it. a roasted corn salad.
roast corn on the cob, remove from cob into bowl and to that add diced bell pepper,(red, green, yellow) red onion,green onion,black olive, diced jicama,salt,pepper,pinch cumin,red wine vinegar. toss together
