personally i would put me in as i love wine
and also if i had one someone to stock it up, they would be there too.
but i agree with some answers it could double as a deep dark dungeon, to lock the hell of our life.

Back NOW--- Since the obvious answer would be Jesus Christ since than my wine cellar would always be full, I should probably pick him...but didn't he tell someone throwing a party to serve the bad wine first and save the best wine to the end? I think so, so he's out--can't pick him..Let's see..Sip..Sip..Sip... I've got it:
We put Harry Potter and Hermione in our wine cellar. They would enjoy the spirits, each other, and probably
develop some new spells to make the world a better place.

the 05 bordeauxes are pronounced to be the classic of a life-time, so whilst you're searching for some good cellar applicants they could be those, those are investment high quality wines , so get them now.

I would put Female Winemakers or Female Vineyard owners in my wine cellar. There are some awesome wines being made by women!

My ex husband, but of course I'd remove the wine first - THAT'S MINE - because he is an alcholic and I'd love to see him suffer the way he made me and our two children
