How many lbs of fish (salmon) can an experienced fishmonger fillet in 1 day? 100lbs? 500lbs? 5000lbs?

About 12 years ago we had a good salmon bite off Ventura, often getting close to limits (2 apiece) for as many as 25 fishermen on the boat. Two deckhands would fillet fish on the 2 hour run back to the dock, and they alway managed to finish and have plenty of time to clean the boat. So I'd have to guess they could each do over ten fish per hour, probably fifteen. Four minutes a fish seems reasonable. (These guys could fillet a 2-pound bass or rockfish in under a minute, so maybe they could do the salmon quicker than four minutes apiece. But we'll go with that.)

These were 12-16 pounders, so doing the math as I type, 15 fish is roughly 200 pounds. So if one of these guys cut for 8 hours without stopping, that makes 1600 pounds. With most fish, the fillets are roughly half the whole weight, so after a day of cutting he'd have 800 pounds of fillets.
