I ordered a ribeye at a restaurant Saturday night. I asked it be cooked medium, but it came back rare. I decided to have it wrapped and cook it more completely at home. Is there a safe way to do this without it becoming tough? I plan to have it tonight either cut up in a salad or in homemade enchaladas.

Your ribeye is a nice and juicy cut of meat and shouldn't toughen when you reheat or cook it more thoroughly. Here are some ideas:

1. Reheat by placing it in a microwave safe bowl, covered, and nuke it for about 1minute. Check for desired doneness and repeat at 30 second intervals until you get what you want.

2. Make a ribeye "hash": add your meat to diced carrots, potatos, onion, and add a jar of your favorite beef gravey. Simmer until veges are cooked thru. Serve with rice and a green vegetable.

Also, did you know that you can send an undercooked (or overcooked) steak back and have it cooked to your liking?
Good luck!

I would saute it with a little bit of olive oil in a non stick pan on low. Maybe 2 minutes on each side.

Pan saute it, or put it in the broiler for about 3 minutes on high.
