If your boss loads more and more responsibilities on to you, it is because he thinks you are capable of coping with them. This is a compliment.
On the other hand, you don't want to be taken advantage of.
Try pointing out to him what your job description is (you should by law have one) and what is happening, but be polite and courteous.
It is a good idea to write down everything you want to say in advance so that you are well prepared, and then ask your boss for an interview to discuss your employment (don't just catch him at an odd moment when he isn't prepared)
If this doesn't work, go to your personnel dept if you have one. If you haven't, ask him for a reference because you intend to look for another job.
You should also explore the possibility of suing your firm for constructive dismissal - this is where a person is forced to leave their job because things have been made intolerable for them (some claimants have been awarded substantial sums). But you should regard this as a last resort.

You sound like you have a boss that most have or have had
Have a meeting with them, but be careful
Be as tactful as you can
Document everything that you do
what it is and how much time it takes
Have your ducks in order
Try to work with your boss, even at times it seems impossible
and last good luck

"he who pays the piper ...."
Lets be honest - one reason he's the Boss is because he is able to get exceptional performance for medico wages ..
Pick ONE below :-
a) Quit
Set your own Business (be your own Boss) or get another job
b) Stop complaining
Explain to your Boss what you are achieving and ask for a raise or just accept you are never going to get paid what you are worth, so start working at the level you are paid

boss's dont know everything, some are even pretty helpless if they dont have the help of employees. but to be a good worker, you have to act like your boss knows everything.
if he believes you can do more, why dont you try it? you might look better in the eyes of your boss (promotion time!)

Be leary....tell him/her to "whatever" when they preach something that they dont practise. It works wonders. Also, "act" more confident and they will see the difference in you and start acting different towards you. I have a **** of a line manager, but he is changing his ways with me because I show him that i will NOT have it.
Also, be silly in a meeting....it really annoys them.....and if it comes to the worst....tell the basket to fall off.
