They are two very different birds. A quaker parrot can be very fun, trained to be your pal and do tricks, talk, make fun noises and they live for a long time.
Canaries, while beautiful are not able to speak or make sounds. however, their singing is unsurpassed. A parrot will not sing like the canary can. Canaries may be trained to sit on your finger, but that's about it. I already have a double yellow head Amazon parrot, so I would get a canary, just to have the beautiful song eminate throughout my house.
So it depends upon what you are looking for in a bird. If you want a beautiful bird that may sit on your finger and sing a most beautiful song, then get a male canary. The yellows are pretty, but the red factors are amazing!
If you want a bird that can be your friend, be trained to do tricks and say words and sounds, one that you may be able to take places, then get the Quaker parrot. Either way, obtain a good book on either type of bird and read everything there is to read about them. In either case, I highly suggest a pelleted diet over a seed diet. It's better for them and they will be healthier. When I inherited my parrot, she wasn't in very good health. I switched her over to a pelleted diet and within six months, there was a big improvement. Now she does sing, in her own parroty way and she's happier, healthier and her colors are more brilliant than ever! Greens, blue, red and yellow. She is such a pleasure to have except when she is super loud, which is in the morning and evening, but we just ignore that. she's so fun! we really love her. He's 40 years old. That wasn't a type-o. She may live up to 70 years! The quaker won't live quite that long, but you'll have to look that up. All I know is that they will live longer than canaries, to the best of my knowledge. Good luck in your decision!

Depends on how much time you have. Quakers are great pets but they need alot of time and attention (a minimum of 2hrs/day). They can be destructive and tend to be possesive of their cages. In addition you need to prepare fresh fruits and veggies for them daily. They are also illegal to own in some states.
Canaries also make lovely pets, and they are much much lower maintenance than quakers. Most canarys enjoy your company but prefer not to be handled directly, therefore they are ok if you work late etc etc. They are smaller birds and much less destructive than Quakers but they are also less personable.
Either way do your research..talk to breeders of both, and seriously analyze how much time you have to dedicate to a bird and how much of a commitment you are willing to make (as much as 25-30 yrs for a Quaker, 5-10 for a canary)
