Mimi's Hawaiian Cake


Ingredients
Nana's Apple Cake Mix®
2 eggs
20 oz. can drained, crushed pineapple
1/2 cup chopped macadamia nuts
1/2 cup shredded sweetened coconut

Directions
Combine first 4 ingredients. Pour into greased 8 x 8 baking dish. Bake at 350° for 45-55 minutes. Sprinkle with coconut 10 minutes before baking is complete. Makes 9-12 servings.


Hawiian Bake


Ingredients
Bountiful Beer Bread Mix®
1 Blue Hawaiian wine cooler (Bartles & James)
8 oz. can crushed pineapple
3 Tbsp. melted butter

Directions
Combine first 3 ingredients. Spread batter into greased 9 x 5 loaf pan. Pour melted butter over top. Bake at 375° for 50-55 minutes until loaf is golden brown and pulls away from sides. Makes about 14 servings.



Honey Teriyaki Hawaiian Quesadillas


Ingredients
8 (10-inch) flour tortillas
8 Tbsp. Honey Teriyaki Sauce, divided
2 cups shredded cheddar cheese, divided
16 slices ( 1 lb.) deli sliced ham, divided
1/2 cup crushed pineapple, drained, squeezed dry and divided

Directions
Place 4 tortillas on flat surface; spread with 2 tablespoons Honey Teriyaki Sauce. Sprinkle 1/4 cup cheese over each. Top each with 4 slices of ham; sprinkle each with 2 tablespoons crushed pineapple. Add another 1/4 cup cheese over each tortilla. Top with remaining 4 tortillas. Place quesadillas on skillet sprayed with cooking spray. Cook over medium heat for 1 to 2 minutes per side until golden and the cheese is melted. Cut each quesadilla into 4 wedges.

It's a great idea to use "new recipes" for a party or event but, you need to practice the recipes to make sure you can make them well. It is safer to try one or two new recipes and cook what you know and do it very well. I cater, compete in cooking contests, and do all my experimenting on my own family and then practice, expand, change and practice some more before using a "new recipe" on a crowd. I'd rather do what I know very well than try new recipes unpracticed on any party crowd. They will all appreciate your efforts!

Here's an entree' for ya
Jerk Chicken Skewers with Pineapple Salsa
(make sure you soak the skewers in water for about 30 min to prevent scorching)
Sides you can get the Caribbean Rice mix. It's microwave in a bag. I think it's by Uncle Ben's, and throw some extra pineapple chunks in it, Cold Italian dressing pasta salad
(boil macaroni, cut up red and green peppers and onions, drain pasta, and run cold water over it while it's still in the colander., pour in some shaken up Italian dressing until it coats everything, and pop it in the fridge)
dessert you can make fruit kabobs w/ strawberries, watermelon,and grapes, and make slushies too!

you dont want hot baked things of course
cold margarita,punch,or lemonade will be great
ice cream cake will be good 2
rainbow sorbet,hambergers,hot dogs,or chips
any food is good with summer

Tortilla Rollups

serves 25

INGREDIENTS
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 1/2 cups shredded Cheddar cheese
10 (10 inch) flour tortillas

DIRECTIONS
In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

Alaskan Spicy Spinach Dip serves 12

INGREDIENTS
2 pounds pepperjack cheese
2 cups half-and-half cream
1 large tomato, diced
1 onion, diced
1/2 cup diced red bell pepper
3 cups spinach, rinsed and chopped

DIRECTIONS
Over a double boiler slowly melt the pepperjack cheese. When the cheese is melted whisk in half and half until smooth and creamy. Stir in tomato, onion, red bell pepper and chopped spinach. Transfer to a serving bowl. Serve warm with tortilla chips or bread.

Amazing Bruschetta serves 20

NGREDIENTS
6-3/4 large tomatoes, coarsely chopped
1-2/3 sweet onion, chopped
1/3 cup and 1 tablespoon and 1 teaspoon olive oil
3 tablespoons and 1 teaspoon chopped fresh oregano
1 tablespoon and 1/4 teaspoon chopped fresh basil
2 tablespoons and 3/4 teaspoon chopped fresh parsley
1-2/3 (1 pound) loaves Italian bread, cut into 1 inch slices
3/4 cup and 1 tablespoon and 1 teaspoon freshly grated Parmesan cheese

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving
