Ok my younger brother is turning 17 tomorrow. For my 19th birthday he made me a Buffalo Sabres cake from scratch so I decided I would do the exact same thing for him but with the New York Yankees. However, instead of a normal cake like I wanted he wants an Ice Cream Cake. Can anybody give me some tips on how to do it?? He just wants it to be vanilla ice cream, chocolate ice cream, and the chocolate cookies in the center. Every recipe I've found needs actual cake mix, and he refuses to accept that. To do it the way he wants would I just soften the ice cream and layer it with the cookies in the center, and then frost with whipped topping and decorate or is it more difficult then that? Throw out any ideas you have, I'm open to anything. Thanks.

Take the ice cream cartons out and let them soften. Then start with a layer of crushed up cookies. Next cut the ice cream into layers and put the layers on top of the cookies. Then do another layer of ice cream with the other flavor. Go back and forth between cookie and ice cream until the ice cream is gone or the pan is full. Then top it with a thin layer of cool whip.

It's delicious!

There's an ice-cream cake recipe popular in this region that he might like. It's easy too!

Take a package of cookies (Oreos, vanilla wafers, chocolate chip, whatever) and put all the cookies in a plastic bag. Hit them with a hammer, mallet or whatever until they are crumbs. (You can blender them but sometimes they get sticky from the fillings and chips).
Mix the crumbs with 1/2 c melted margarine and press in the bottom and sides of a shallow pan (11" x 13").

Pour 1/2 c (or more!) chocolate or caramel syrup, (whatever flavor goes with your cookies and ice cream), such as Hershey's syrup, over the crumb mixture.

Remove your ice cream from the package and slice 1" thick. Lay the slices over the crumb mixture, filling in the spaces. You don't need to soften the ice cream.

Pour another 1/2 c. syrup over the ice cream.

Spread softened Cool Whip over the top.

Decorate as desired.

Freeze for at least 2 hrs or overnight before serving.

This stuff is sooooo good!!

Easy, line layer cake pans with plastic wrap leaving somewhat long edges hanging out. You'll need them later. Press softened ice cream into them and put them in the freezer.

Then put 40 oreo cookies (filling and all) into a ziploc bag and crush them with a rolling pin or grind them in your food processor. Mix in a half cup of melted butter (it should be very moist so add more melted butter if it doesn't hold together well when you form it into a ball).

Turn one layer out of the cake pan onto a serving platter using the plastic wrap to help you loosen it. If it's stuck dip the pan in some warm water briefly and that should do the trick.

Press the cookie mixture on top of the first layer. Then take the second layer and while still in the pan, turn it upside down and line it up with the first layer. Pull the plastic wrap to loosen it and if it's stuck, leave the second layer on top of the first in the pan and apply a kitchen towel soaked in warm water to the pan for a few seconds.

After you get the layers stacked. You can press on any remaining cookie topping you have and put the whole thing back into the freezer for a minimum of 10 hours to get it as cold as possible.

Then quickly frost it and keep it frozen until you're ready to serve it.

Try this they are SOOOO good!

It may not be exactly what he wanted, but its just an idea.

Make an ice cream cake. It is SO easy to make. All you need is 2 boxes of Ice cream bars, two jars of fudge, 2 containters of cool whip and a kind of candy like mini m&ms or butterfinger, or heath bars are what we have used in the past.

Layer the bottom of the pan with icecream bars so they fit snug in the bottom of the pan, next spread a layer of fudge over the ice cream bars (if you have to warm it to spread it, wait till it cools for the next layer or the cool whip turns a little runny). Next put on a layer of cool whip, and then a layer of your candy. If you use a candy bar, just smash it up into small pieces and sprinkle it over.

Repeat each layer one more time and you have a WONDERFUL ice cream cake. YUMMY! Everywhere I take this people ask how I made it and when I tell them, they cant belive how easy it is.

-Basically, find a cake recipe you think he'd like. Then, bake cake in a tube pan. After it's done, let it cool and take out the cake carefully.

-Cut off top quarter of cooled cake; set aside.

-Remove center of cake by cutting 1/2 inch from inner and outer edge to within 1 inch from the bottom.

-Scoop out inside with spoon leaving 1 inch of cake on bottom. Refrigerate or freezed at least 1 hour.

-Place ice cream in medium bowl. Microwave at 30% 30 to 60 seconds, or until softened. Spoon into cake. Replace top. Freeze at least 6 hours. Make the desired topping.

It works best when done in this manner. Good luck and Happy Baking!

First get a bowl the size u want the cake to be
Then put plastic wrap in the bowl
Then put the ice cream flavors u want like layors
Then when u get to the middle of the layors then put the layor of chocolate cookies
Then freeze for about a few hours
Then pull the cake put by the plastic wrap
Then one fun idea is to cove the sides with candy bars
Then decorate the top

I tried it and it is great

Ice Cream Cake

For the cake layers:
3 cups sugar
2 3/4 cups all-purpose flour
1 1/8 cups cocoa powder, preferably Dutch-process
2 1/4 teaspoons baking powder
2 1/4 teaspoons baking soda
1 1/2 teaspoons salt
3 eggs
1 1/2 cups milk
3/4 cup vegetable oil
1 tablespoon pure vanilla extract
1 1/2 cups very hot water
To finish the cake:
1 pint mint chocolate chip ice cream, slightly softened
1 cup cream
8 ounces semisweet chocolate
1/2 cup cream
4 ounces white chocolate
Drops mint extract, optional
Drops green food coloring, optional

Heat the oven to 350 degrees F. Grease a 13 by 17-inch sheet pan and line the bottom and sides with parchment or waxed paper.
Sift together the 3 cups sugar, flour, cocoa, baking powder, baking soda, and salt. Transfer to a mixer fitted with a whisk attachment (or use a hand mixer) and blend briefly. Whisk together the eggs, milk, oil, and vanilla extract in a medium bowl and add to the dry ingredients and mix at low speed for 5 minutes. Gradually add the hot water, mixing at low speed just until combined. The batter will be quite thin. Pour the batter into the pan. Bake until a tester inserted in the center of the cake comes out clean (a few crumbs are okay) and the center feels firm to the touch, 25 to 30 minutes. Let cool in the pan. Chill, covered, until ready to build the cake. Make room in your freezer for a serving platter that you'll build the cake on.
Place a piece of parchment over the entire cake and flip it out onto another sheet pan. Peel off the original parchment and cut the cake in half so you have 2 pieces 13 by 8 1/2 inches. Place a piece of cake on a rectangular serving platter and schmear the ice cream on it all the way to the edges. Smooth it out with an offset spatula and place back in the freezer.
After it has chilled 15 minutes or so place the second layer of cake on top, cover with parchment paper and press down with a sheet pan gently to stick the top layer. Return to the freezer while you make the chocolate topping.
In a small saucepan, heat the 1 cup of cream and once it comes to a boil pour it over the chopped semisweet chocolate and whisk to make a smooth ganache. Do the same with the remaining 1/2 cup of cream and the white chocolate, adding the mint extract and green coloring to make a light mint green color then place it in small pastry bag with a small plain tip.
Remove the cake from the freezer and working quickly spread the chocolate ganache over the surface of the cake smoothing it with an offset spatula.
Drizzle lines of the green ganache over the entire surface of the cake at diagonal. Take a toothpick and run it back and forth in the opposite direction to draw it through the ganache and make decorative pattern.
Return to the freezer until ready to serve. Trim off the edges to even off the cake then cut into rectangle pieces.

crush oreo cookies it is excellent!!! also put a layer of crushed vanilla wafers and sugar wafers!!! they will thik you bought it from the store!!!!! I did that for a family reunion and got soooooo many compliments!
