One quick non spicy one is good old Italian salad dressing. The longer the steak marinates, the more the connective tissue breaks down and the more tender it will be

Personally I Like To Marinate My Steak In A Little Red Wine, Onions, And Garlic. Or Just Season It With A Little Knorr Aromat. Both Are Really Simple

This is quick, and easy. Whisk together 2 parts EVOO to 1 part Worcestershire and coat the steaks. Let sit for approx 15 - 20 minutes.
Just before you cook, rub a SMALL amount of brown sugar (it carmelizes and gives steak a nice crust),
Sprinkle with a little garlic powder (NOT garlic salt).
Add sea salt and cracked pepper to taste and grill (or however you are cooking it).
Be sure to add the spices right before you are cooking so the salt does not leech out the juices from the meat.

This is the best marinade recipe I have. While I often marinate for 8 hours, I've have good results with as few as 2. This is Asian inspired and absolutely wonderful.

These amounts will do nicely for 2 pounds of meat:

1 tablespoon olive oil
1/4 cup tamari sauce or soy sauce
1/4 cup dry red wine
4 cloves garlic, minced
4 scallions, minced
6 whole peppercorns
1/8 teaspoon ground coriander
1-inch cube fresh gingerroot, peeled and grated or minced

Simply blend all ingredients together

My favorite rub for beef is as follows:

1/2 tsp chili powder (not spicy)
1/2 tsp ground coriander
1/2 tsp garlic powder
Salt and pepper to taste

Mix all of the above and rub it onto the meat. You can either leave it to soak in in the refrigerator or cook it right away.

If you have any left, mix that with 3 tablespoons of olive oil, a tablespoon of red wine vinegar, a 1/2 teaspoon of dijon mustard and you have a great dressing for a salad to go with your steak.

I make this all the time and I use the same mixture on salmon and chicken. It's wonderful.

The purpose of marinating is to infuse flavor tot he meat and to tenderize it. The best way to do this quickly is to use some sort of acidic liquid. The best way is to put some seasoning on the meat then cover it with the liquid then let sit for a minimum of 1 hour. Some acidic liquid choices : soy sauce, red wine vinegar, white wine vinegar, balsamic vinegar, citrus juices, and beer. The seasoning you use depends on the flavor you want. After marinating, sprinkly some more seasoning on and cook to your desired doneness! Yum!

I like to use McCormick Grill Mates (Montreal steak seasoning) then put on worchestershire sauce and olive oil to marinate a few hours. They turn out really great on the grill.

Use oil based salad dressings. With the assortment available in your grocery store you can taylor the flavor to suit you. Just let it marinate for about 2 hours. You can intensify the flavor by heating the dressing some also. Then pour it on the cold meat and put it back in the referidgerater.

good old plain worcheshire sauce is awesome. You can marinate it for 30 minutes or less and if you have any of the steak seasoning bottle shakers, use that too.
yum, i want steak now.
