Well I make lots of different ones. Usually put in grilled chicken with sauteed onions, chopped jalapenos, pepper jack cheese, and queso fresco cheese. I also take stew beef meat and cook it for two hours with beef broth, cumin, jalapenos, chili powder, salt, pepper, onion powder, and garlic powder. Remove the meat from the broth and shred and then add into the quesadilla with the same toppings as the chicken.

I have trouble with my blood sugar, so I watch my carbs carefully...I eat this quite often...
Carb Tortilla (or whatever type you prefer- flour kind though)
Can Chicken Breast (drained)
Cheese (whatever your fancy but a kind that melts well is best)
Garlic powder
oregano
small amt salsa
jalepeno slices (i cut them up in small pieces)
heat up chicken, spices and salsa. Place tortilla in skillet sprayed with cooking spray. Let it toast nicely opened faced. Once it's more crispy, flip it over repeating the spraying process. sprinkle cheese on the entire tortilla, and place the meat mixture on one side of the tortilla and fold over. Continue heating until it is the desired crispy-ness.
Enjoy and expect to use a fork and napkin :)

I put whatever cheese i have in the house - jack, cheddar, colby, queso quesadilla, provolone and use corn tortillas. Sometimes I add precooked chicken.

We use refried beans, Mexican Cheese combo and Taco Bell Hot Sauce. Over the top we soemtimes put a bit of hot queso.
Had them just last night, too!

This is going to sound weird, but it's my favorite.
Leftover Zatarains dirty rice, and cheddar. Best quesadilla ever. Although Z's black beans and rice, with cheddar, is good too.
Talk about mixing cuisines!
