First of all NO if using mayo. Also never put warm or hot meat into refrigerator. Let chicken cool before adding mayo or eggs to your chicken salad!

Well technically you can. But I wouldn't advise it. I assume there's mayo in the chicken salad? You don't want mayo getting warm for food safety. Just cut or shred it and put it in the freezer for 15 minutes or so until cool. Then make salad as usual!

I find it's easier to shred when it is cold. I try to shred by hand and not cut with a knife and fork as I used to do. This somehow adds a better texture to the salad, it doesn't end up like paste, lol. This way you can remove that fat and cartilage too. Which is nasty to bite into when eating chicken salads.
