We have a lunch at our church on sunday and we are having a salad spread this time. i was needing some salad recipies. any kind someone can give me will be appecieated. thanks

CHICKEN AND BEAN SALAD

2 cups cooked chicken, shredded
1 can cannellini beans
1/4 cup green onions, sliced
1/3 cup miracle whip salad dressing
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
2 teaspoons rice vinegar
1/4 teaspoon dijon mustard
2 garlic cloves, minced
1/2 red onion, sliced thinly
1/8 teaspoon cayenne pepper (pinch)
lettuce leaves

Combine chicken, beans, onions, in a salad bowl.
In a small bowl or blender, combine ginger, soy sauce, vinegar, mustard, garlic, and mayonnaise; blend.

Toss with chicken mixture and serve over lettuce leaves.

Carrot Salad:
Shredded Carrots
Rasins
Sugar (to taste)
Coat with Mayo

Bean Salad:
Red Kidney Beans(drained)
Chopped sweet pickles( 2 or 3 )
Hard Boiled Egg(finely chopped)
Sweet Onion
Mayo

Macarroni Salad:
1/2 lb. Elbow Macarroni (cooked)
1 pkg Cherry Tomatoes (slice in half)
1-Cucumber(peeled and diced)
1 bunch of green onion (greens only)
Green Pepper(chopped)
2-Hard Boiled Eggs(finely chopped)
1/2 cup relish
Mix all together and coat with Italian Dressing instead of Mayo

Cucumber and Onion Salad:
1-Cucumber
1-Onion
1-tomatoe -diced

Slice all ingredients and mix into about 8 oz of sour cream.
Let chill for about 6 hours--YUMMY

Here's my lemon orzo spinach salad recipe. Even though it has only 1 cup of orzo, it makes a HUGE bowl. But you can double it if need be.

1 cup orzo (boil that while chopping and making dressing)

1/2 pkg. fresh spinach leaves (chop it up, it'll wilt with the warm pasta)
1/3 cup pine nuts, toasted
1 bunch green onions, chopped
1 can garbanzo beans, drained and rinsed

That's the basic recipe, you can also add sun-dried tomatoes or any veggie.

Lemon vinaigrette:
1/3 cup olive oil
Zest of 1 lemon
Juice of 2 lemons
Spoonful of minced garlic from a jar
Salt, pepper, and a big pinch of dried oregano
Shake all that together.

Toss the drained pasta in with the veggies, toss with the dressing, and then add a pkg of feta crumbles, any flavor. It is so easy and so good.

Here is a pasta salad that I get compliments on.
Ingredients: 1 pkg. ring pasta prepared as pkg. directions states, 4 oz. cubed sharp cheddar cheese or whatever kind you like in the brick form, 1/4 cup finely chopped onion,1/2 cup finely chopped celery, 1 - 1 1/2 cups cut up chicken, 1 cup frozen peas, for the dressing 3/4 cup mayo or miracle whip, pepper and salt to taste, a little vinegar or lemon juice, a teaspoon or so mustard if desired. Mix the onion, celery, mayo, salt, pepper, sugar, mustard and chicken together,and fold in the rest of the ingredients till mixed.

Maccaroni Salad simple and good

1 pack elbow noodles
1 yellow bellpepper (finely chopped)
1 red bellpepper (finely chopped)
1 green bellpepper (finely chopped)
1 medium size onion (finely chopped)
3-4 Tbs. Mayo
1-2 Cups Milk
salt/pepper for taste

Cook Noodles and let cool down. In a large bowl add Bellpeppers, Onions, Mayo and Milk and mix well. Add Noodles, add Salt/Pepper as desired and mix again. Keep refrigerated for at least two hours before serving. If salad is too sticky add more milk instead of adding Mayo - works fine, tastes good and is less fattening........

You may also add some chopped celery and ham if you like but I rather have it simple.

Chicken Case Salad----NO LETTUCE :)

Two-three chicken breasts cut into chunks
Seasoning
Cesar's Salad dressing
Spiral noodles
Parmesan cheese

Cook the chicken with the seasoning ( I use johnny's) and let cool. Boil the noodles to al dente and drain. Combine the chicken, noodles and dressing...mix and then add the parm cheese!! I have also added peas every once in awhile for color

Here is a dessert salad that goes like hotcakes at our church functions.

Mandarin Orange Salad
1 16-oz. container of Cool Whip, thawed
1 16-oz. carton of small curd cottage cheese
1 large (6 oz.) box of orange Jell-O (use it dry)
1 large can of mandarin oranges, drained well

In a large bowl mix well the Cool Whip and cottage cheese. Stir in the dry Jell-O. Gently fold in the mandarin oranges. Pour into a nice serving bowl and garnish with additional mandarin oranges. Cover and chill.

I always get the request to make my famous "Ring Salad" at all the family get together's...
SO here it goes:

3 boxes of ring noodles...cook as directed, rinse with cold water,let cool,
1 can spam lunch meat...cubed as small as you like
1 can sweet peas...drained
1/2 red onion...chopped small
2 bags Colby jack cheese.....shredded

Sauce is:
mayo( i use miracle whip) a cup or so
Sugar about half a cup ..can add more to taste
pinch of salt
pinch of pepper
dash of yellow mustard
milk....a cup or so....

mix these until smooth...can adjust to your taste..I have used ranch along with the rest of the sauce!!
mix all ingredients and cool..overnight if possible...YUMMY

Get raw vegetable. Put raw vegetable in bowl. You now have salad.
