I love salads with a little olive oil (reported to prevent cancer of the colon/ breast/skin) and cider vinegar. Why do you say no oil? Garlic is also delicious and healthy and great with salads as are herbs such as basil - which is great with tomatoes (containing lycopene - an antioxidant).
Cook some green beans in water and when cooked add a little salt (if permitted) and a little olive oil (again if permitted), add garlic. Makes a nice alternative to ordinary salads.
If you can't eat potatoes, what about sweet potatoes - containing oestrogen - which are delicious baked in foil just smeered with olive oil/salt and lying on a bed of rosemary. Can BBQ them this way or cook in oven. Enjoy.

you could prepare an Italian minestrone. cut all the vegetables in pieces and put them in a pot and let them cook adding tomato sauce and water. they shoul cook slowly. put salt in it and when they are ready you should put some olive oil on them. it should be genuine olive oil, that one isn't unhealthy it's good for your veins as it ha s no cholesterol, we eat it with pasta.
