If you are talking about things that will be given to people in the other country, and assuming it is a third world nation, some of the standards are: soap, toothbrush/toothpaste, shampoo, socks, underclothes, shoes/sandals, aspirin, tylenol, neosporin or other antibiotic creams, pencils, paper, crayons.
Check with your church as they may have a list of specific items based on where they are going (not all country will let you bring in medicines) and what ages they expect to be dealing with on the trip.
We always keep a couple of old shoe boxes around the house. When we go shopping, we will pick up an item or two that is one sale that week, and put it in the boxes. When it gets full, we wrap and label it for content, and set it aside. Then wheneve our church as a mission trip (which is about every other month), we already have some packed and ready to go. We just sent three boxes to Honduras last week for a school there (about 400 live in students).

TP
Water
food
Sleeping necessities (pillow, blanket(s), etc)
the same things for your baby that you would bring on any trip.
And bring some money...you can always buy what you need if you don't have it.

If you are on a missionary trip for humanitarian purposes, bravo! If you plan on proselytizing I suggest you take common sense with you. That will be your best travel companion. alleviate the physical needs of the people you plan to visit and leave the spiritual awakening up to them!

TOILET PAPER!!!
you really don't want to end up whipping with leaves, and I don't know where you will be throwing those used toilet tissues away, you better not pollute my RIVERS!!!
Never mind the toilet paper, you can just use water and wash. emmm, how about some love for the people you will be vistiing/helping. Maybe you shouldn't care about what you have to pack for yourself, but what you should pack for others.
Screw u then!!

There'll be someone at your church who is coordinating this. Ask them.
