I asked why dinosaurs aren't mentioned in the Bible.

The multitude answered that they were mentioned.

So I would have to assume two of every dinosaur species was included in the Ark.
One would have to assume also that ample food and water for forty days and nights (or was that 40 thousand years?) had to be brought along. Two brontosaurus at 160 tons each etc.

Is it conceivable that Noah and his sons could have accomplished such a colossal task?
How big was the Ark?

It does say every kind of animal, but it would only make sense that Noah would bring babies on board, not full grown animals.
1st they eat less
2nd they weigh less (maybe a few hundred pounds instead of several tons.
3rd they are not ready for mating

As far as gathering the animals into the ark Genesis 6:20 states:
"two of every sort shall come unto thee," so Noah didn't even have to gather the animals, God brought the animals to Noah.

It is concievable. Is it still miraculous? Yes, God still destroyed the entire earth by flood, there is no video floating around of the flood(LOL) so it is expected that some would question it. It takes faith, but it still is quite possible.

And this [is the fashion] which thou shalt make it [of]: The length of the ark [shall be] three hundred cubits, the breadth of it fifty cubits, and the height of it thirty cubits. (Genesis 6:13)

Now 2 things to keep in mind, a cubit was about 18-19 inches. 2nd, is the fact of "micro-evolution" to borrow the term. Through breeding and suppressed genetic traits, you only need 1 breeding pair to, over a few generation, create hundreds of species.

Finally, yes, dinosaurs were on the ark. In scripture, there are references to "dragons", "beasts" and other such. There is nothing referring to the size or age of the creatures in the ark.
