Pepper jack all the way.
But I love the other ones too, I love almost any kind of cheese.
I am a cheese freak!!!!!!!!!

Here's the order I like the cheese you listed...
1 Pepperjack
2 Swiss
3 Colby
4 Provolone
5 American
I would also add blue cheese to your list as a number 3, pushing colby, prov and american down.

I like them all except American cheese which actually isn't a cheese at all but an artificial mess made mostly of oil that is bad for you.

In order:
Swiss (Grilled ham and swiss... yum... Or just with some green apple slices)
Provolone (with roast beef is great)
Colby (Good on just crackers)
American (only on burgers and grilled cheese)
Pepperjack (Another salami and crackers thing.)

I Love all cheese, but my choice of cheese depends on what it is being served with.
Provolone is probably my favorite though.
I also love feta cheese

Of the ones that you listed, swiss. I like very, very sharp cheeses. But not spicy.

Provolone sounds good.(never tried before) But if its Italian, it;s good. Mozzerella's the best
