Is there anyway to avoid the bitter foodcoloring taste? Iam making a catterpiller cake for my daughters first birthday and each segment is going to be the colors of the rainbow but i just make the purple frosting and it is really bitter from the frosting... what can I do?

Use paste or gel food colro rather than the liquid stuff.

to get vibrant colours, you typically need large quantities of food colouring, and that results in the bitterness.

use gel food colouring as the colours are more concentrated than powder or liquid colourings.

for dark colours, start with a chocolate frosting so you will not need to use as much colouring to achieve the right shades.

also, there are several ranges of special "no-taste" food colouring you can purchase. there are also pre-packaged icing in strong colours which do not come with the bitterness. These are probably your best bet. refer to Wilton for further details.

Food coloring should NOT add any flavor to your frosting.
