just got a waffle iron and i can't seem to find any healthy recipes for waffle batter online so i was wondering if anyone has one? thanks!

Whole Grain Waffles
1 cup whole wheat flour
3/4 cup quick oats
1/4 cup cornstarch
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/3 cups skim milk
4 teaspoons white vinegar
3 eggs, beaten
1/4 cup butter, melted
1 tablespoon oil
1 tablespoon honey

In a large bowl, combine dry ingredients (first 6 ingredients).
Stir until well combined.
In a small bowl, combine the rest of the ingredients.
Add wet mixture to dry mixture and stir to moisten.
Cook waffles in waffle maker and dust with powdered sugar

Pecan Waffles with Roasted Pecans and Banana Syrup

2 cups all-purpose flour
½ cup ground lightly toasted pecans
1½ tsp baking powder
¼ tsp salt
4 eggs, separated
¼ cup sugar
1 tsp vanilla extract
½ cup melted butter
½ cup cold butter, cut into pieces
2½ cups milk
nonstick cooking spray to coat waffle iron
1 cup pecan pieces
½ cup cane syrup
4 medium bananas, peeled and cut into 1/2-inch slices

Preheat the waffle iron according to manufacturer's instructions and preheat the oven to 200 degrees F.

Combine the flour, pecans, baking powder and salt in a medium mixing bowl and whisk to combine. In another bowl, combine the egg yolks and sugar and whisk until pale yellow. Add the vanilla extract, 1/2 cup melted butter, and milk, and whisk to blend. Combine the egg and milk mixture with the flour mixture and whisk until just combined. Do not overmix.

In the bowl of an electric mixer, beat the egg whites until soft peaks form, about 1 minute. Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix.

Using a pastry brush, lightly coat the waffle iron with some of the vegetable oil. Pour enough batter into the iron to just barely cover the waffle grid. Close the waffle iron and cook according to manufacturer's instructions, or until golden brown, 4 to 6 minutes. Transfer to a baking sheet and keep warm in the oven while you prepare the remaining waffles.

In a saute pan, add the remaining 1/2 cup of butter and the pecan pieces. Cook, stirring occasionally, until pecan pieces are light golden and fragrant, 2 to 3 minutes. Add the banana slices and cook until light golden and soft, 2 to 3 minutes. Add the syrup and bring to a simmer. Serve with the warm waffles.

Here's a recipe from Cooking Light for Chocolate Chip Waffles (you could leave out the chips to make them healthier):

Ingredients
Cooking spray
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fat-free milk
1 tablespoon butter, melted
1 teaspoon vanilla extract
1 large egg yolk
1 large egg white
1 tablespoon sugar
1/2 cup semisweet chocolate minichips


Preparation
Coat a waffle iron with cooking spray, and preheat.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a large bowl. Place milk, butter, vanilla, and egg yolk in a bowl; stir with a whisk. Add to flour mixture, stirring until blended. Beat egg white and sugar with a mixer at high speed until stiff peaks form. Fold into flour mixture. Fold in minichips.

Spoon about 1/2 cup batter onto hot waffle iron, spreading batter to edges. Cook 3 to 5 minutes or until done; repeat procedure with remaining batter.

Here is a low fat one.

LOW FAT WAFFLES

2 1/2 to 3 c. flour
2 packets Nutra Sweet
2 tsp. double acting baking powder
1 tsp. vanilla extract
Dash of salt
2 c. skim milk
1 carton egg substitute
4 egg whites
8 tsp. lowfat butter, melted
No-stick cooking spray
Low fat butter
Low calorie syrup
Fruit spread
Light whipped topping

1. Mix dry ingredients.
2. Add milk, egg substitute and vanilla and mix well.

3. Add melted butter and blend into batter.

4. Beat egg whites until stiff and fold into batter.

5. Pour 1 cup of batter onto hot waffle iron (previously sprayed with no stick cooking spray) and cook until golden.
