If you read Mark chapter 2:18-22, you'll see that it had to do with following the Jewish customs at the time.
As Jesus explained, it was time for a new bag for a new wine. The old system of things should not be repeated any longer.

Jesus was using an analogy to get a point across. He was bringing in the New Covenant between man and God where we would be freed from the curse of the Law and be justified by grace through faith in the sacrifice that Jesus was going to make for us.
The religious leaders of his day were set in their ways like stiff old wine skins that had dried up after being used so that if new wine were put in them they couldn't expand and adapt to the changing conditions. In the same way the religious leaders could not accept Jesus' teachings because they were so used to being under the Law that they were not able to accept a new way of being justified by God.

The new wine would be tainted by the flavors of old wines in the old skin.
I do not see a problem with it but to wine aficionados I am sure its sacrilege or something akin to it.

That statement specifically relates to new doctrine. Many Jews couldn't accept that Jesus was the savior and that Christianity was true, they were old wineskins filled with old Religion.
The same applies to things happening today. Many Christians reject evolution, because they are living with old wineskin mentality and are unable to accept the reality of Science.

So easy question. You cannot be your old self and yet say you are save. You have to die and take the new you. The new you, when the new spirit is pour into it , transform you into the perfect being. Sinless.Then you are now form back in the image of God. My little sister also knew the spiritual side of this question.

It's a metaphor. If you put new wine in skins designed for old wine (wine that ages) it begins to crack.
