After doing a search for "acrylamide", I'm still not entirely sure what it is, just another toxic substance in junk food. As it is, I don't eat potato chips and fries, etc., as an adult, and I would give them to my child(ren) in very limited doses. For me all of the yumminess and goodness of potatoes are ruined and destroyed once they are put in grease made with God knows what and fried. However, this is just me.

The fats in potato chips can be good, depending in what they are fried. Potatoes fried, or even better-- oven roasted, at home in olive oil, good. Potatoes fried in restaurants (especially fast food restaurants, I don't trust them at all), in unknown mystery glop, bad.

Acrylamide is a chemical that is produced naturally in food as a result of baking or frying. It is also likely to be produced by grilling and roasting food and some other heat treatments.

In industry, it is manufactured as a crystalline white powder and is used in the production of polyacrylamide gels.

Polyacrylamide is used as an additive for water treatment, and as a papermaking aid. It is also used as a soil conditioning agent, in sewage and waste treatment, and ore processing. It is used as a grouting agent in the construction of dam foundations, tunnels and sewers.

In 2002 research from Sweden showed that frying and baking creates high levels of acrylamide - a chemical that may cause cancer - in a wide range of food. Acrylamide was not known to occur at these levels in food before this research.
As acrylamide has only recently been discovered in food at these levels, practically nothing is known about its effects on humans via the diet. On the basis of animal data and understanding of its biological effects, it is thought that acrylamide can probably cause cancer. It has caused nerve damage in people who have been exposed to it at work. In studies on male animals, acrylamide was shown to impair fertility. The Agency believes that exposure to cancer-causing chemicals that damage our genetic material (DNA), such as acrylamide, should be as low as reasonably practicable.
