I bought it thinking it was something different (newly married, just learning my way around the kitchen) and it's been in my freezer long enough. It is defrosting in my fridge right now.
What can I make with it??
Black Angus Eye of Round Roast. 2.75 Pounds
I have a slow cooker, big stove pot, over whatever I need spices wise and sides. What can I make with this? I bought two and the first one I cooked it in the oven, but cut it wrong so it was tough to eat.
Recipes only please, and please try to refrain from links. I want recipes from people who use them and know it will taste good.

you could slice it into round steaks and marinate in a little oil,black pepper garlic pwder and thyme. for a few hours then grill them they should already be fairly tender. not like prime rib but nice enough

I just bought one too the "eye of round roast" and cut it into three pieces since it is just my husband and myself and I didn't want to cook all of it and waste it.
Here is what I did and it turned out great.
I have this heavy deep pot with a lid that I use for long cooking on top of the stove. I placed olive oil in the bottom and let it get hot..then I took the roast and peppered it with the pepper grinder and didn't add salt since it can make meat tough. I browned it on all sides....turning it every 15 minutes...after it was browned very well on a medium heat setting I added 3/4 cup of water mixed with a 1/4 cup DRY sherry....not sweet..DRY...and added it to the roast to continue cooking until it was fork tender.I kept the lid on all the time...Oh WOW...It made the best juice or gravy in the pan and we had it with a Greek salad and baked potatoes. Now I have two more in the freezer to make...this was enough meat the first one to serve us 3 meals...so for 9 dollars and change...it was a good investment....I hope this helps you....OH....let it rest on a cookie sheet for about 15 minutes before you slice it thin....then sprinkle it with salt....the leftovers are great used like this: get some canned beef gravy and add the drippings you have left....place a piece of bread like French or regular sandwich bread. Then place the meat in the gravy and serve over the bread...it's a great way to use it...

Cook in a slow cooker with a can of roasted garlic and mushroom condensed soup(add water according to directions on can), or if you prefer just mushroom soup or if you like onions use cream of onion soup. Add an onion, cubed potatoes and carrots the last hour or so of cooking. Canned potatoes and carrots are equally as good as fresh veggies. The gravy is wonderful over mashed potatoes or rice.
It is yummy!
You can put it in a slow cooker on high when you go to bed and it will be ready when you arise in the morning...

Pop it in the slow cooker with loads of yummy veg and about 1/2 pint of good stock (you can make this with an Oxo cube and hot water) and cook for about 6 hours. Serve with mashed spuds and make a gravy from the stock.

ITALIAN STYLE ROUND ROAST

2 lb. beef round roast
2/3 bottle (16 oz.) Italian salad dressing
1 tsp. salt
1/2 tsp. ground black pepper
1 can Italian (Roman) tomatoes with juice or 1 lb. fresh Roman tomatoes, diced
1/4 c. Italian parsley, chopped, stems included
1 c. red wine
1 bay leaf
Fresh rosemary or fresh oregano
1 tbsp. soy sauce
1 tbsp. cornstarch
1/4 c. water

Place meat in a shallow dish. Pour dressing over. Marinate at room temperature for 2 hours or in the refrigerator for 4 hours or overnight. Pour off marinade. Drain meat.
Place on a preheated microwave browning dish, if available. Or place in a microsafe dish. Microwave at high power for 3 minutes on each side. Sprinkle with salt and pepper. Add tomatoes, parsley, red wine, bay leaf and rosemary or oregano. Microwave at medium high power for 5 minutes. Turn meat over.

Microwave again at high power for another 5 to 6 minutes or until done to your liking. Time depends on how thick the piece of meat is and how tender it is. Let rest a few minutes. Slice to serve.

For sauce, strain pan juices. Combine with cornstarch, soy sauce and water in a microsafe dish. Microwave at high power, stirring at least once, for 3 to 4 minutes.

For 4 to 5 servings, microwave cooking time 19 to 21 minutes.
