Wash them.

Here is why:

The "old school" French method is to brush them or wipe them with a damp cloth, because they say the mushrooms absorb moisture and don't cook the same if you wash them in water.

They do absorb water, but in small amounts. If you wash them in advance and let them sit out at room temperature for a few hours, then the effect will be negated.

If you don't believe me, get a scale and weigh them before you wash them, after you wash them, and then after you let them sit for a while. To all the critics, what do you think happens to mushrooms in nature when it rains?

If you wash them then use them immediately, they will still cook up fine. It depends on how you want to use them. If you are trying to develop a caramelized sauteed mushroom, then the less moisture the better. You can counter this by using less mushrooms in a pan and sautee them in batches. The moisture given off releases the heat energy of the pan because of evaporation, so the less you have in the pan, the more energy remains to cook the mushrooms.

If you are just adding them to a stew or something, don't worry about the water.

Some experts recommend just brushing or wiping off mushrooms with a damp towel, since they are so absorbent and may lose some flavor if soaked in water. However, others think it's not such a big deal.

Instructions

The easiest way to clean them is often used in high class restaurants and works fine for me as well.
Remember - don't wash for too long because mushrooms absorb water.

Take a big bowl and fill with water, add about 4-6 Tbs. flour and dump the mushrooms in it. Stirr with hands carefully (flour in water is like sanding paper and gets the dirt off easy and quick). Mushrooms should be clean in less than two minutes. You will se that the water turns all brown when you take the mushrooms out.

rubbing alcohol will kill all the germs...as far as taste, don't do it. For a better method, use a moist paper towel or plain towel and gently rub the outside of the mushrooms. This gets all the dirt and grime off the outer layer. The key to the paper towel is, it can't be too wet or too dry. It has to be somewhere in the middle.

Never put mushrooms under running water. It will toughen up mushrooms and give it a hardy texture. Always use a wet cloth and gently remove the dirt from mushrooms.

there are two ways to clean fresh mushrooms;
The first and most popular is to gently rinse them under cold water, then dry them or wipe them with a wet cloth. The second is to peel off the top layer of skin, but people do not use this method as much as it can remove some goodness from some various types of mushroom.

It's a myth that they will absorb water-Alton Brown weighed them before and after and there was no change. Just wash them in water with a brush.
