I thought an oil and herb was also used ... and curious if this started with John the Baptist.

just water probably,but anointing was an Old Testament custom as well which carried into the Church with baptismal,ordination and confirmation(Chrismation)anointings with olive oil. Chrism oil has balsalm and herbs in it.

He Baptized Jesus in the Jordan River and with this water he did the baptism.

Water of course but I don't know if he was dunked like most churches or if water was poured on his head like some Anabaptist churches. That you will need to research.
